Cranberry Tea Cake

Cranberry Tea Cake 
Good Morning 
A super delicious Cranberry studded tea cake which is eggless and super easy to bake.
Ingredients:
All purpose flour - 250 gms
Condensed milk - 380 gms
Odourless oil - 100ml
Curd - 50 gms
Powdered sugar - 50 gms
Milk - 100 ml
Baking powder - 1tsp
Cranberryies - 150 gms
Vanilla essence - 1/2 tsp
Method:
# Seive flour and baking powder.
# Whisk Oil and condensed milk together until you get tiny bubbles. (It takes about 5 minutes)
# Add curd, milk, vanilla essence, powdered sugar and whisk well. All wet ingredients should be mixed well.
# Add Seived flour to the wet ingredients in 2 batches. Mix well.
Add the cranberries and mix well.
# Grease the baking tin (I used 7 inches square tin).
# preheat convection oven at 170'c for 10 minutes 
# Pour the batter to the greased tin. Tap the tin twice so that batter spreads evenly.
# Bake at same temperature for 25-30 minutes. Once baked check with a skewer, if it comes out clean (which means cake is baked well.
# Demold the cake after 10 minutes. Allow it to cool on a wire rack. 
Once it comes to room temperature slice the cake.

Beetroot Thayir pachadi

Beetroot Thayir pachadi 
Good Morning 
A spicy with mild sweet Beetroot Raita which is a must in Onam Sadya. Traditionaly onions are added but I've not used it, if you wish you can use it.
Ingredients:
Beetroot - 1 medium size
Curd - 1 cup
Green chilli - 1 nos
Grated coconut - 1/4 cup
Cumin seeds - 1/4 tsp
Salt as per taste 
Tempering:
Oil- 1 tsp
Mustard seeds - 1 tsp
Coriander leaves 
Method:
# Boil beetroot. Remove the skin chopp and add to the mixer jar with grated coconut, green chilli, cumin seeds add little water and grind to a smooth paste.
# Mix the grinded beetroot paste with thick curd. Add salt and mix well.
# Heat a pan and add oil, add mustard let it crackle well add the tempering to the Beetroot Raita/ pachadi. Garnish with coriander leaves.

Onion Capsicum Paratha

Onion Capsicum Paratha 
Good morning 
A healthy tasty Onion Capsicum Paratha to kick start your Day. It's a perfect for a lunch box when served with ketchup, curdor any Raita.
Ingredients:
Onion - 1 big
Capsicum - 2 small 
Carrots - 1 small
Oil - 1 tsp
Coriander powder - 1/2 tsp
Turmeric powder -1 pinch
Garam masala - 1/4 tsp
Red chilli powder - as per taste 

Dough
Wheat flour - 200 gms
Salt to taste 
Oil - 1 tsp

Method:
# To make dough mix whole wheat flour salt and sprinkle water and knead a soft dough add little oil knead well and close the dough with a lid.
# In a pan add oil add finely chopped onion, salt and saute well. Add finely chopped capsicum and grated carrots, red chilli powder, coriander powder,garam masala powder sprinkle water and mix well. Let it cook well. 
# once the mixture becomes dry switch off the stove and allow it to cool completely.
# Take small portions af dough and start rolling with the rolling pin. Spread the onion Capsicum mixture and cover with another chappati and again roll with the rolling pin gently so that the filling is spread evenly.
# Heat a pan cook the paratha by adding little oil on both sides flip the paratha and cook both sides. 
Onion Capsicum Paratha is ready to serve.

Keerai Kootu

Keerai Kootu 
Good morning 
 A Lucious smooth tasty Keerai Kootu made with Arai / Amaranthus leaves. You can prepare with Serru keerai/ spinach (palak) etc. Kootu is a South Indian delicious side dish made with any vegetable / spinach with a coconut based recipe.

Ingredients:
Keerai/ Amaranthus leaves - 1 bunch
Moong dal - 1/2 cup
Grated coconut -1/4 cup
Jeera / cumin seeds - 1/2 tsp
Turmeric powder- 1 pinch
Red chilli - 2 nos
Hing / asafoetida - as per taste 
Salt - to taste 
Tempering:
Oil - 1 tsp
Urud dal - 1/4 tsp
Red chilli -1
Method:
# Wash and chopp keerai (any spinach)
# In a pressure cooker add moong dal, keerai/ spinach, turmeric powder and 1/4 cup water and cook for 2-3 whistle.
# Grind grated coconut, red chilli, cumin seeds by adding little water.
# Add the grinded paste to the cooked spinach/ arai keerai. Add salt, asafoetida and boil for 2min.
# Switch off the stove. 
# Heat oil, add mustard seeds once it cracle add urud dall and red chilli pour the tempering in the kootu. Keerai Kootu is ready to serve. It's a fantastic pair with steamed rice and pappad.

Dry Fruits Laddu

Dry Fruits Laddu 
Happy Akshaya Trithiya to everyone!
A delicious, healthy Dry Fruits Laddu made in just 10 minutes. 
Ingredients:
Dates - 500 gms
Poppy seeds- 50 gms
Cashews- 100 gms
Almonds - 100 gms
Mellon seeds - 50 gms
Ghee / classified butter - 1.5 tablespoons 
Method:
# Remove seeds from dates.
# Grind dates to coarsely.
# Dry roast all the other Ingredients and coarsely powder in mixer jar.
# Heat ghee, add grinded dates and mix well.
It takes 2-3 Minutes for dates to mix well. Switch off the flame, add other Dry Ingredients which are coarsely powdered.
Mix well allow it cool down and start making Laddu's.

Kodumillet Muskmelon Smoothie

Kodumillet Muskmelon Smoothie 
Good morning 
Muskmelon Kodumillet Smoothie is a delicious, thick, creamy millet recipe which can be had as breakfast.
Ingredients:
Muskmelon- 500 gms
Kodumillet/ Varagu- 100 gms
Milk - 1 cup
Sugar - 2 tablespoons 
Nuts for garnish 
Method:
# Wash and soak Varagu/ Kodumillet for 3-4 hrs.
# Cook the millet well. Let it cool down completely.
# In a mixer jar add cooked millet, sugar, chopped Muskmelon and blend to a smooth mixture.
# You can chill and Serve with nuts topped.

Sapota/ Chikoo Banana Milkshake with ice apple

Chikoo  Banana Milkshake with ice apple 
Good Evening 
Sapota/ Chikoo Banana Milkshake with ice apple (nongu). Ice apple has a high water content which helps to keep you hydrated during summer season. A delicious, thick, creamy Milkshake with seasonal fruits with Sapota, Banana sweetened with some jaggery powder.
Ingredients:
Sapota- 2-3 nos
Banana- 1 medium size 
Ice apple- 3 -4 nos
Milk - 150ml
Jaggery powder- 1.5 tsp
Cocoa powder optional 
Medium:
# In a mixer jar add chopped Sapota, Banana, Jaggery powder, Cocoa powder, milk and blend to a smooth texture.
# Tranfer to service glass add chopped ice apples and enjoy.
