Whole Wheat Bread
Whole Wheat Bread is a soft, healthy perfect for breakfast time. Try this simple and health bread recipe.
Ingredients:
Whole Wheat flour - 200 gms
Honey - 1 tablespoon
Instant dry active yeast - 1/2 TSP
Milk + water - 1/2 cup
Butter - 1 TSP
Salt - 1/2 TSP
Oil - 1 tablespoon
Milk+honey - 1 tsp (brush before baking)
Method:
# Mix whole wheat flour, yeast, honey, salt.
# Add water+milk and knead the dough. Sprinkle water if you require. Stretch and pull method while kneading. Knead for 10-12 minutes.
# Grease a bowl with oil. Place the dough and apply oil and cling wrap. Leave it for proofing.
# After it doubles in size. Grease the surface with oil and punch down and remove excess air. Knead for 2-3 minutes.
# Give a log shape.
# Grease your baking tin with oil.
Place the log in baking tin. Let it rest for 20-25 minutes / till it reaches the pan.
# Mix milk+honey. Brush it well.
# Preheat oven / microwave convection oven @ 190'c. Bake @ same temperature for 25-30 minutes.
# Once baked leave it for 10-15 minutes. Demould and let it cool on wire rack.
Slice your bread after 3-4 hrs.

Spinach Pie

Spinach Pie
Pie is a baked dish made with pastry dough. This has a filling  which can be sweet or savoury. Sweet filling can be fresh fruits, jams, nuts... savoury filling can be vegetables, cheese, eggs, mushrooms, meat, cottage cheese etc. Today I'm going to bake a Spinach Pie with whole wheat flour. 
Ingredients:
For the dough
Whole wheat flour - 1 cup / 120 gms
Unsalted butter - 1.5 tablespoons
Ice water - as required
Salt - a pinch
Filling for Pie
Spinach - 1 cup
Grated cauliflower - 1/4 cup
Grated cheese - 1/4 cup
Onion - 1 medium size
Crushed pepper - 1/2 TSP
Crushed cumin - 1/4 TSP
Dry herbs/ Mixed herbs - 1/2 TSP
Oil - 1 tsp
Salt to taste
Method:
# Mix whole wheat flour and salt. Add chilled butter and mix well. Bread crumbs consistency.
# Sprinkle chilled water and bring the dough together. Do not knead.
#Once the dough comes together cling wrap and refrigerate for 1/2 hr.
# For filling heat a pan add oil, saute chopped onion, chopped cauliflower, spinach. Add crushed pepper, cumin, salt and mix well. Sprinkle water and cook for 3-4 min. Add grated cheese and dried herbs and mix well. Allow it to cool.
# Take out the dough from refrigerater and roll it to circles. 
# Keep the filling cover it with another circle. Give impression with fork.
# Preheat oven / microwave convection mode @ 180'c.
# Give a milk wash and bake @ same temperature for 20-25 minutes.
Once done serve with cofee/ tea.

Rose Milk Cake

Rose Milk Cake
Rose Milk Cake is a super soft, moist, rich cake. Creamy rose milk enhances it's taste...an eggless whole wheat cake with minimum ingredients.
Ingredients for cake
Whole wheat flour - 1 cup
Baking powder - 1/2 tsp
Salt - 1/4 tsp
Fresh cream - 1/2 cup
Powered Sugar / jaggery/ cane sugar - 3/4 cup
Curd - 1/4 cup
Rose essence - 1/2 tsp
Milk - 2 tablespoons
Rose colour - few drops
Rose Milk:
Milk -1 cup
Sugar - 2 tablespoon
Rose essence - 1/2 tsp
Rose / pink colour - few drops.
Frosting:
Non-diary whipping cream - 250 ml
Rose essence - few drops
Pink / rose colour - few drops



Method:
Rose Milk - Boil and chill the milk. Mix sugar, rose essence and pink colour. Let sugar dissolve well. Refrigerate the rose milk. Rose milk is just to drizzle over cake. 

For Cake Batter:
# Sieve whole wheat flour, baking powder, salt for 6-7 times. (dry ingredients)
# Mix powdered sugar/jaggery/cane sugar, fresh cream, rose essence, curd together. (wet ingredients)
# Mix dry ingredients with wet ingredients. Cut and fold method. If batter is thick add two tablespoons of milk and mix well.
# Preheat your microwave convection mode @ 170'c.
# Grease your baking tin with oil / butter. Dust some whole wheat flour.
Consistency of batter should be thick like idli batter.
# Pour the batter in greased tin.
# Bake @ 170'c for 35-40 minutes.
# Check by inserting a knife, if it comes out clean, your cake is baked well.
Allow it to cool. Demould your cake on wire rack and let it cool completely.
Pressure cooker method:
Add 1/2 ich salt in pressure cooker, place the ring mould close the pressure cooker without gasket and whistle. The flame should be medium. Preheat for 10-15 minutes. Place the baking tin on the ring mould close pressure cooker without gasket and whistle and bake for 45-50 minutes on medium low flame. Check by inserting a knife in the centre. If it comes out clean means cake is baked well. Leave it for 5-10 minutes and demould. Let it cool completely on wire rack. Slice your cake once it cools down.


Frosting:
# Before you start whipping cream. Keep your whipping blades, bowl in freezer for 1/2 hr.
# Start whipping the non- diary whipping cream on low speed for 1/2 minute. Increase your speed....you can see the cream becomes thick.
Whip until you get a stiff peaks.
Add essence and colour to your whipped cream.
# Slice the cake in two halves. Use a cerrated knife.
# In a cake board apply some frosting and place one half of the cake. Poke the cake... drizzle rose milk. Apply frosting, place the other half of cake slice, poke and drizzle rose milk. Apply frosting on top of it. Cover the cake well with frosting. Place a nozzle in piping bag fill the frosting and start decorating your cake. 
While serving add rosemilk which enhances the taste.
Refrigerate your cake for atleast 2 hrs.

Chocolate Salami

Chocolate Salami
Chocolate Salami / Chocolate de Salami are Portuguese or Italian dessert. These are no bake chocolate fudge with Marie biscuits, butter, sugar, nuts and milk. 
Ingredients:
Marie biscuits - 30 nos
Milk - 1/2 cup
Sugar - 1/2 cup
Butter - 1/4 cup
Cocoa powder - 1/4 cup
Nuts - 1/2 cup (walnuts, almonds, tutti-frutti, raisins, cashews)
Vanilla essence - few drops.

Method:
# Chop nuts.
# Crush Marie biscuits. 
# Heat a pan add milk, butter, sugar, vanilla essence, cocoa powder and boil on medium flame. Till you get a chocolate sauce consistency.
# Switch off the stove and let it rest for few minutes. The sauce should be warm when you pour in biscuit mixture.
# Mix chopped nuts and crushed biscuits together.
# Pour the chocolate sauce in biscuit mixture and mix well.
# Pour the above mixture in cling wrap and give a log shape.
# Freeze the log for 2-3 hrs.
# Slice your chocolate salami.
Serve them.

Spinach Bread

Spinach Bread
Spinach Bread is velvety, super soft, healthy bread with whole wheat flour and honey. This is a vegan spinach bread. Perfect for breakfast.
Ingredients:
Whole wheat flour - 200 gms
Spinach - 1/2 bunch
Honey - 1 tablespoon
Instant active dry yeast- 1/2 tsp
Water - 1/2 cup
Oil - 2 tablespoons
Salt - 1 tsp
Honey + water - 1 tsp (brushing)

Method:
# Wash and clean spinach. Make a fine puree without adding water.
# Mix whole wheat flour, yeast, honey, salt.
# Add Spinach puree and start kneading the dough. I used 1/2 cup of water. Sprinkle and knead. Pull and stretch method. Initially it will be very sticky. I kneaded for 15 minutes. It will be soft and elastic dough. 
# Grease a bowl with oil, place your spinach dough apply oil well and let it rest for 1hr.
# Once it doubles in size. Apply oil on work surface... punch down and remove excess air.
# Do not add flour. Just grease your hand with oil. Make a rectangular shape. Grease your baking tin with oil.
# Give a log shape. Pinch the ends well.
# Place the log in baking tin. And it to proof for 20-25 minutes. Baking tin size 7×3.
# Just 10 minutes before baking preheat the microwave convection mode @ 180'c.

# Mix water and honey. Brush the spinach dough.
# Bake @ 180'c for 25 minutes.
# Once baked apply oil to the bread.
# Leave it on counter for 5 minutes. Loosen the sides and unmold.
# Let it cool completely. After 3-4 hrs. Slice your bread.
