Thiruvatherai Kali

Thiruvatherai Kali
One of the traditional recipe of Tamil Nadu is Thiruvatherai Kali. It is a neivedhiya to lord Siva.

Ingredients:
Raw rice - 1 cup
Jaggery - 2 cups
Moong dal - 2 tablespoons
Grated coconut - 1/2 cup
Cardoman powder - 1 tsp
Ghee - 2-3 tablespoons
Cashews - few
Method:
# Dry roast moong dal and rice separately, until a nice aroma comes.
# Once it comes to room temperature, make powder.( semolina consistency)
# Dissolve jaggery in water.
# Take a pressure cooker, add 1 tsp of ghee, add jaggery syrup once it starts boiling, add rice and dall powder and stir well.
For 1 cup of rice, 2 1/2 cups of water is required.
# Pressure cook for 3-4 whistles.
# Once pressure is released, add grated coconut, cardoman powder, cashew's fried in ghee and mix well.
It will become fluffy, once it cools.

Thiruvatherai Kuzhambu / Kootu
Thiruvatherai Kuzhambu / Kootu is also called as Ezhi curry Kootu or even Thalagam..  prepared using minimum 7 vegetables, but we can add 7,9... more than that. With 3 root vegetables, 3types of beans varieties, 3 country vegetables etc....
This Kuzhambu is a 'neivedhyam' to lord Siva on Thiruvatherai. In the month of Margazhi and nakshatram Thiruvatherai, this recipe is prepared and offered with Kali to Lord Siva.

Ingredients:
7 types of vegetables:
Ashgourd, Yellow Pumpkin, Yam, Broad beans, Carrot, Brinjal, Raw banana, Tender Field beans.
Tamarind juice - 1 cup

Dry roasted Masala:
Dhania / Corriander - 2 tsp
Channa dal - 1 tsp
Urud dal - 1 tsp
Toor dal - 1 tsp
Methi / Fenugreek seeds - 1/2 tsp
Pepper - 1/2 tsp
Red chilli - 3-4 nos
Til - 1 tsp
Grated coconut - 2 tablespoons

Other ingredients:
Turmeric powder - 1 tsp
Mustard - 1 tsp
Asafoetida - 1 tsp
Jaggery - 1/2 tsp
Gingerly oil - 1 tsp
Salt to taste.
Curry and coriander leaves few

Method:
# Wash and cut vegetables in cubes, add turmeric and boil well.
# Dry roast the masala and make a fine paste.
# Once vegetables are half cooked add tamarind juice and boil well.
# Once raw smell of tamarind goes, add masala paste, salt, asafoetida, jaggery and boil well.
# Seasoning in gingerly oil add mustard, pinch of methi seeds and curry leaves.
# Garnish with Corriander and curry leaves.

# Preheat Airfrier at 180'c for 4-5 min.
# Airfry @ 180'c for 5-6 min.
Ready to serve.

Eggless Christmas Cake ( Whole Wheat Flour)
Today I'm sharing a simple Eggless Christmas Cake prepared using whole wheat flour, jaggery and brown sugar, without alcohol or rum.


I'M using fresh orange juice to soak my fruits and nuts. As I've already soaked my fruits and nuts in orange juice for 3-4 days which is stored in refrigerator.

Ingredients:

Whole Wheat Flour - 125 grms
Butter (unsalted) - 60- 70 grms
Baking powder - 1 tsp
Cinnamon powder - 1/2 tsp
Nutmeg powder - 1/2 tsp
Milk - 1 cup
Fresh Orange juice - 1 cup
Jaggery - 1/2 cup
Brown Sugar - 1/2 cup
Strawberry jam - 1 tablespoon
Fruits and nuts:
Black Raisins, Apricot, Cranberries, Normal Raises, Cherries, almonds and Cashews. All together 1 cup.
Method:

# Soak fruits and nuts in orange juice for 2-3 days or atleast mix well.

# Just melt butter, add brown sugar and jaggery syrup,  jam and mix well. 

# Add soaked fruits with melted butter, jam and jaggery syrup together.

# Mix, whole wheat flour, baking powder, nutmeg powder, cinnamon powder together.

# Mix dry ingredients and wet ingredients together.
# Add warm milk to the mixture.

# Grease cake tin with butter, dust some flour.
Tin size 6×3.

# Pour the cake mixture in greased baking tin.
At the top add some more cranberries and chopped cashews.
# Preheat Microwave @ 150-160'c.
# Bake @ 150-160'c for 40-45 min.
I have used convection mode.
Check your cake, using a knife in the middle of the cake, If it comes clear your cake is done.
Allow it to cool and serve.
