Sabbakki Rava idli

Sabbakki Rava idli (Sabudana Rava Idli)
Good Morning 
Karnataka special Sabbakki Rava idli/ Sabudana Rava Idli is a super delicious, soft, easy to make in just 20 minutes. It's healthy, and tastes yummy when served with Kara chutney/ coconut chutney.
Ingredients:
Sabudana- 1 cup
Rava - 1 cup
Curd - 1 cup
Water - 1 cup
Grated carrots - 1 tsp
Salt to taste
Tempering:
Oil
Mustard seeds 
Curry leaves
Asafoetida 

Method:
# Soak Sabudana for 1 hr.
# In a pan add oil, temper with Mustard seeds and Curry leaves, add rava, Asafoetida and roast for 2-3 Minutes(do not burn or over roast).
# In a wide bowl add soaked Sabudana, roasted and tempered Rava, curd, water mix well add salt. 
# Check the consistency...if the batter is too thick add little curd. 
# Add grated carrots, curry and coriander leaves. Rest the batter for 10 minutes.
# Add water in steamer...Grease the idli plates
Steam for 15 - 18 minutes.
Enjoy the sabbakki Rava idli with Kara chutney/ coconut chutney.

Varagu Arisi Pongal

Varagu Arisi Pongal/ Kodo Millet Pongal 
Varagu Arisi/ Kodo millet Pongal is an excellent recipe which can be made for breakfast/ during Tiffin. 
Ingredients:
Kodo millet- 1 cup
Moong dal- 1 cup
Cashews- few
Crushed Pepper- 1/2 tsp
Crushed cumin - 1/2 tsp
Ghee - 2 tablespoons 
Curry leaves few
Asafoetida- 1/4 tsp
Salt to taste 
Method:
# Wash and soak kodo millet for 2-3 hrs.
# Wash Moong dal well.
# Mix Moong dal and soaked millet add 2.5 cups of water and Pressure cook for 3-4 whisles.
# Once pressure is released mash the Pongal well. Add Salt and Asafoetida and give a good stir.
# Heat a pan add ghee add cashews, crushed pepper, crushed cumin. Let the Cashews change its colour add to the Pongal and mix well. Add curry leaves and mix.
Pongal is ready to serve.

Oats Rava Idli

Oats Rava 
Good Morning!
Oats Rava Idli is an easy, delicious recipe perfect for a breakfast/ tiffin time.
Ingredients:
Oats - 1 cup
Rava - 1cup
Curd - 1.5 cups
Oil - 1 tsp
Green chilli- 1 finely chopped 
Ginger - 1/2 inch finely chopped 
Mustard seeds - 1 tsp
Asafoetida- 1/4 tsp
Curry and coriander leaves- finely chopped 
Baking soda- 1 pinch
Salt - as per your taste 
Method:
# Roast Oats for few seconds and pulse in a mixer jar.

# Add oil in a kadai, add mustard let it crackle well add green chilli's, ginger, Corriader and Curry leaves scared well...add rava and roast for few minutes. Let the aroma come out well.

# Whisk curd add coarsely grounded Oats, roated rava with tempering, salt, asafoetida, 1/2 cup water. Mix well. Let it rest for 15-20 minutes.

# Steam the idli pan. Grease the idli plates with oil. 

# Add Baking soda to the batter whisk well.

# Pour the batter in the idli plates and steam for 15-20 minutes.
Once Oats Rava Idli is ready serve with some chutney.

Thakkali Bajji (Indian Style Salsa)
Good Afternoon!
Thakkali Bajji is an Indian style Salsa made with tomatoes, garlic, onion as the key ingredients. I tried this recipe after watching Chef Deenas YouTube channel. 
A Kongunattu style chutney recipe...which is a big hit in my house. This can be served with idli, dosa, chappathi, poori or with rice.
It's a chutney consistency....once the vegetables as cooked well you need to use 'Muthu' or Muddler to mash well and add the tempring which enhances this Tomato bajji.
Ingredients:
Tomatoes - 7-8 nos
Onion (shallots) - 200 gms
Garlic - 4-5 pods
Green chilli's- 2nos
Potato- 1 no
Brinjal- 2-3 nos
Ridge gourd- 150 gms
Oil - 2 tablespoons 
Mustard seeds- 1 tsp
Channa dal- 1tsp
Turmeric powder- 1/4 tsp
Asafoetida- 1/2 tsp
Salt to taste 
Lavish sprinkle of curry and coriander leaves 
Method:
# Heat a pan add oil, shallots, garlic, green chilli's...saute add tomatoes, chopped potatoes, diced brinjal, diced ridge gourd, salt, asafoetida, turmeric powder. 
# Sprinkle water and cook well...switch off the flame.
# Once it is cooked well use 'Mathu' or Muddler to mash well. 
# Heat oil in a separate pan add mustard seeds, channa dal, shallots, curry and coriander leaves fry well...add the tempering to the Tomato bajji.
Thakkali/ Tomato bajji is ready to serve.
