Coconut Rice

Coconut Rice
A simple, easy, delicious rice recipe made with few ingredients in your kitchen. A South Indian Special variety rice which we make for Aadi Perukku, Kannu Pongal, Navaratri etc.
Ingredients:
Cooked rice - 1 cup
Grated coconut - 1/3 cup
Coconut oil/ refined oil - 1.5 tablespoons
Mustard seeds- 1.5 tsp
Urud dal - 1 tsp
Red chilli- 3-5
Peanuts - 2 tablespoons
Asafatedia - a pinch
Curry leaves few
Salt to taste
Method:
# Heat a pan add oil, add peanuts fry well. Remove in a separate plate. In the same pan add mustard seeds let it splutter well add urud dal once it slightly changes colour add red chilli, grated coconut and saute well on medium flame it should not change its colour, add salt, asafoetida, curry leaves and switch off the flame. Add the fried peanuts 
# Mix cooked rice with coconut seasoning.
Coconut Rice is ready to serve.

Sweet Rice Puttu

Sweet Rice Puttu is prepared during Navaratri, specialy on Friday as Neivedhyam. This is also prepared for Puberty event in Tamilnadu.
Ingredients:
Raw rice - 2 cups
Jaggery - 1.5 cups
Turmeric powder - 1/2 tsp
Salt - 1/2 tsp
Grated coconut -1/2 cup
Cardoman powder - 1 tsp
Ghee - 1 tsp
Cashews - 10 nos

Method:
# Soak rice for 1 hr. Drain water and put the rice in cotton cloth, let it dry.
# Make a fine powder in mixie.
# Dry roast the rice flour to pinkish colour.
# Heat some water add salt and turmeric powder. 
# Sprinkle hot water little by little to the rice flour and mix well.( Consistency should  be when you hold the flour it should hold a shape)
# Tie the rice flour in a cotton cloth and   steam for 15 - 20 min.

# Let the mixture cool for some time.
# Sieve the rice flour. (consistency of the mixture will be like a beach sand)
 #Take jaggery and boil well. Filter the syrup to remove impurities. Boil the jaggery syrup until you get a ball consistency.

# Add jaggery little by little in the rice flour mixture. In few min rice flour mixture will come to Puttu consistency.
Add cardoman powder, grated coconut, and fried cashew.
mix well and serve.

Paasi Parupu Sundal / Moong Dal Sundal
A very healthy Sundal, recipe.... Paasi Parupu or moong dal, is really delicious and full of nutrients...but many of us, do not try this Sundal as it is quite tricky / sticky to prepare...

 Today I will share step by step instructions to make Paasi Parupu Sundal.. which you can serve, not only, for Navratri but for snacks or for tea time.

Ingredients:
Paasi Parupu - 1/2 cup
Grated coconut - 2 tablespoons
Green chillis - 1 or 2
Asafoetida - 1/2 tsp
Turmeric - 1/2 tsp
Mustard - 1 tsp
Sundal Podi / Curry powder - 1 tsp
Curry leaves few
Oil for seasoning
Method:

# Soak Paasi Parupu / Moong Dal for 1/2 hr in water.


# Stain the water. In a pan add 2 cups of water and boil well.
# Add soaked Paasi Parupu / Moong Dal to the boiling water. Add turmeric.

# Let it boil for 10 min and switch off the stove.

# Strain the Parupu / dal in a strainer.

# Check whether it is cooked.

# Heat a pan, add oil, mustard when it spluter, add strained Paasi Parupu / Moong Dal, salt, green chillis, Asafoetida, sundal podi / curry powder, grated coconut and mix well. Add curry leaves.


Do neivedhiya and serve..

Kondakadalai Sundal / Chick Peas Sundal
Navartri means Gollu or Gomba... For nine days, need to prepare different varieties of Sundal which are really healthy and nutritious.

Kondakadalai / Chick Peas Sundal is everyone's favourite.

Ingredients:
Boiled Chick Peas - 1 cup
Mustard - 1 tsp
Urud dal - 1/2 tsp
Red chilli - 1 or 2 no
Sundal Podi / Curry Powder - 1 tsp
Grated coconut - 2 tablespoons
Asafoetida - 1/2 tsp
Turmeric powder - 1/2 tsp
Salt to taste
Oil for seasoning
Method:


# Heat a pan add oil, mustard when it spluter, add urud dal and red chilli.


# Add boiled Chick Peas, turmeric powder, salt, Asafoetida mix well.



# Add grated coconut, Sundal Podi/Curry Powder, Curry and mix well.

Do neivedhiya and serve.
