Vellarikai Kootu (Dosakai Kootu)

Vellarikai Kootu
Kootu is a sidedish served in full meals. There are different varieties of kootu....this is a simple Kootu with Vellarikai (cucumber)/ Dosakai.

Ingredients:
Vellarikai / Dosakai - 2 cups (chopped)
Moong dal /Passi parrupu - 1/4 cup
Grated coconut - 3 tablespoons
Green chillies - 2 nos
Cumin seeds / jeera - 1 tsp
Asafatedia - 1/2 tsp
Turmeric - 1/4 tsp
Salt to taste
Seasoning:
Mustard Seeds - 1/2 tsp
Urud dal - 1/4 tsp
Oil - 1 tsp
Curry leaves

Method:
# In a pressure cooker add chopped vellarikai / dosakai, moong dal, turmeric powder with little water and pressure cook for 3 whizles.

# In a mixer jar add coconut, green chillies and cumin seeds and make fine paste adding little water.


# Once the pressure is released, add the coconut paste, salt, asafatedia and boil well.


Switch off the stove.
# Seasoning should be done with mustard seeds, urud dal and curry leaves.

Serve with  variety rice or steamed rice.

Ridge Guard / Peerkangai / Turee ka Bharta
Bharta's are nothing but well mashed vegetables as side dish for roti, rice etc...
Any vegetables can be taken for bharta's...



Ingredients:
Ridge Guard - 2 cups
Tomato - 1 cup
Mustard seed - 1 tsp
Jeera/Cumin seeds - 1/2 tsp
Turmeric powder - 1 tsp
Red chilli powder - 1/2 tsp
Corriander Powder - 1 tsp
Garam masala - 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Corriander leaves few

Method:
# Finely chopped Ridge Guard and Tomatoes.

# Heat oil in a pan, let mustard crackle, add jeera, tomatoes and saute well.

# Add Ridge Guard, dry masala and mix well.

# Once Cooked mash the vegies well.

# Garnish with Corriander leaves.
