Coconut Cookies

Coconut Cookies
Simple and healthy cookies with coconut & whole wheat flour (atta). These are healthy with jaggery, without baking soda and baking powder. Today I'm using fresh grated coconut but you can even use desiccated coconut. 


Ingredients
Whole wheat flour - 3/4 cup
Powered jaggery - 1/4 cup
Unsalted butter - 1/4 cup
Fresh grated coconut - 1/4 cup
Milk - 2 tablespoons
Vanilla essence - few drops

Method:
# Cream butter and powdered jaggery.

# Mix grated coconut, vanilla essence with butter mixture.

# Add whole wheat flour and make a dough. Add 
1 tablespoon of milk and make soft dough. If you require can add some more milk.


# Cover the dough and refrigerate for 10 minutes.
# Preheat microwave convention oven @ 180'c.
# Grease the baking tin with oil or butter. Make marble size balls of dough... slightly press and arrange them in baking tray.

# Bake @ 180'c for 10-12 minutes. 
Once done allow them to cool on wire rack.
Store the cookies in an airtight container and enjoy.

* Airfrier - Preheat @ 170'c for 5 minutes. Bake @ same temperature for 8-10 minutes.
* Pressure cooker - add salt and place the ring mould and preheat on medium flame. Arrange the cookies in a plate and bake for 20-25 minutes without gasket and whistle on medium flame.

Rava Idli

Rava Idli / Semolina Idli

Rava / Semolina Idli is South Indian Special recipe served with chutney and sambar for breakfast/ tiffin time. Simple and quick recipe with few ingredients...this is also an instant idli recipe.

You can even roast rava with seasonings and store in an airtight container for 1 or 2 months. 

Ingredients:
Rava / sooji / semolina - 1 cup
Curd - 1 cup
Mustard / Rai - 1 tsp
Urud dal - 1/2 tsp
Channa dal - 1/2 tsp
Asafatedia - 1/4 tsp
Baking powder - 1/4 tsp
Salt - to taste
Cashew - few (optional)
Coriander leaves / curry leaves - few chopped
Oil - 1 tsp 

Method:
# Heat a pan add oil and mustard let it crackle, add urud dal and channa dal. As it slightly chages colour add rava / semolina and roast on a medium flame. Once it slightly chages colour add salt and asafatedia and coriander leaves and roast for few more minutes.

# Once you get a nice aroma of roasted rava switch off the stove and leave it for 5 minutes.
# Add curd to the roasted rava and rest the batter for 10-12 minutes.


# Add baking powder to rava batter and 1/4 cup of water. Mix well...it should be thick idli batter consistency. Once you add baking powder you can see some froth in rava Idli batter.

# Grease the idli mould / plate with oil, place a cashew and pour the rava idli batter. Add water to the idli steamer...steam rava idli's for 12-15 min.



# Once done leave it for 2-3 minutes then serve with chutney and sambar.

Orange Peel Pachadi

Orange Peel Pachadi

Orange Pachadi is a South Indian special recipe with sweet, tangy and slightly bitter in taste. This is prepared with orange peel. 
For this pachadi we need to remove the white covering from the orange peel as it gives a bitter taste. Wash and chop the orange peel.

Ingredients:
Orange peel chopped - 1 cup
Tamarind juice - 1 cup (thick juice)
Jaggery - 1/2 cup
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Mustard - 1/2 tsp
Methi / Fenugreek seeds - 1/4 tsp
Channa dal - 1 tsp
Asafatedia - 1/2 tsp
Red chillies - 2 nos
Oil - 1 tsp
Salt - according to your taste

Method:
# Pressure cook orange peel for 2 whistles.

# In a pan add oil...once heated add mustard, fenugreek, red chillies, channa dal. Let it spluter well.


# Add cooked orange peel, turmeric powder, red chilli powder, salt, tamarind juice. Mix and  let it boil well.


# Add jaggery and simmer the stove.

# It will thicken in 10-15 minutes. Add asafatedia and switch off the stove.
Orange Pachadi is ready to serve. You can store in refrigerator for more than one month.

Brownies (whole wheat flour & eggless)

Brownies
These brownies are chewy, fudgy, chocolatee... An eggless version with whole wheat flour and brown sugar.


Ingredients:
Whole wheat flour - 1 cup
Powdered Brown sugar - 1 cup
Chopped chocolate - 1 cup
Butter - 1/2 cup
Curd - 1/4 cup
Milk - 1/2 cup 
Baking powder -1 tsp
Baking soda - 1/2 tsp
Cocoa powder -1/4 cup
Vanilla essence - few drops
Chopped walnuts - few

Method:
# Sieve whole wheat flour, baking powder, baking soda, cocoa powder for 4-5 times. ( dry ingredients )
# Melt chocolate, butter (double boiler method) add powdered brown sugar and mix well. Let the mixture rest for few minutes...then add vanilla essence, curd milk and mix well. (wet ingredients)

# Mix wet and dry ingredients together in small batches. Batter will be very thick.

# Grease the baking tin with butter or oil and dust some flour.
# pour the mixture in baking tin add chopped walnuts and some chopped chocolate.

# Preheat your microwave convection oven @ 160'c.
# Bake at same temperature for 25- 30 min.
# Check with a knife it should be slightly sticky.

# Let it cool on wire rack... slice your brownies.

* Before slicing your brownies you can keep it in refrigerator for 1 hr then slice.
* Pressure cooker - Place some salt preheat for 15 minutes... place a ring mould then keep your baking tin. Close cooker without gasket & whistle.
Bake on a medium flame for 45-50 minutes.

Ragi Roti (gluten-free)

Ragi Roti
Simple, healthy, super soft, gluten-free rotis which is easy to make for breakfast... can be served with raita, gravy, kootu or even with any chutney.

Ingredients:
Ragi flour - 1 cup
Water        - 1 cup
Oil              - few drops
Salt to taste.

Method:
# Boil water add 2 drops of oil, salt and ragi flour and stir well on low flame.


# In 3-4 minutes it will come together. Switch off the stove and cover it well. (allow it to cool)

# After 20 minutes apply some oil in your palm and start kneading. In few minutes it will become soft dough. Make marble size balls.

# Heat tawa... coat ragi balls with ragi flour and start rolling. You can roll a thin chapati. (as we do for our normal wheat flour chapati)



# Once tawa is hot add the chapati...in few seconds you can flip and cook the other side.




Once cooked add some oil and make ragi roti. 

You can also make like pulkas. It will puff up well. Apply some ghee to pulkas. These ragi rotis are super soft even you can pack for lunch box.
