Proso Millet Pulav / Panivaragu Pulav

Proso Millet Pulav / Pani varagu Pulav 
Good Afternoon!
Proso Millet/ Panivaragu Pulav is high in nutrition and low in calories. A simple, easy and healthy recipe perfect for a main course. 
Ingredients:
Proso Millet- 1 cup
Bay leaf- 1 number 
Black Cardamom- 1 number 
Cloves - 2 nos
Cinnamon stick - 1/2 inch 
Cumin / jeera - 1/2 tsp
Oil / ghee - 1 tsp
Chopped onion - 1 number
Carrots - few pieces
Capsicum- few pieces
Salt - to taste 
Corriader leaves for garnish 
Method;
# Wash and soak Proso Millet for 3-4 hrs.
# In a pan add oil, add cumin let it splutter well, add bay leaf, cardamom, clove, cinnamon, chopped onions and fry, add chopped vegetables, salt and saute well.
# Add the soaked Proso Millet to the tempered vegetables and whole spices. 
# Add 1 cup of water, salt to taste and cook on medium flame. Once cooked well add chopped coriander leaves and serve.
Notes: I generally remove the soaked water and add fresh water to cook Millets. If you use the same soaked water do not add extra water while cooking Millet Pulav.

Homemade Chocos

Homemade Chocos 
Good Morning!
Homemade Chocos which are healthy and tasty, perfect to be served as a cereals for breakfast with warm milk. These are made with fiber rich, sweetened with Jaggery powder. 
Ingredients:
Oats - 1 cup
Whole Wheat flour- 1/4th cup
Jaggery - 3 tablespoons 
Cashews- 7-8 nos
Almonds- 7-8 nos
Peanut butter- 2 tablespoons 
Cocoa powder- 1 tablespoon 
Water just to make a soft dough 
Method:
# Dry roast, Oats, cashews and almonds separately.
# Make a fine powder of Cashews and almonds. 
# Make Oats powder as well.
# Mix Oats powder, cashew powder, almond powder, jaggery powder, Peanut butter, cocoa, wheat flour. Sprinkle little water and Make a tight dough. Rest the dough for 10 minutes.
# Preheat oven at 160'c. Grease a baking tin.
# Shape the dough in small chocos by pressing with thumb finger and index finger. 
# Bake at 160'c for 13-15 minutes.
Once it becomes crispy allow it to cool down completely. Store at an airtight container.

Sakkara Hollige

Sakkare Hollige 
Good Evening!
Sakkare Hollige is a super delicious aromatic dessert. A simple, easy polli/ Hollige recipe which is very popular in Karnataka.

Ingredients:
Poppy seeds/ kus-kus - 3 tablespoons 
Powdered sugar - 3 tablespoons 
Dry coconut grated - 1/2 cup
Cardamon powder- 1 tsp
Wheat flour - 1 cup
Salt  - 1 pinch
Ghee & oil as required 

Method:
# Mix Wheat flour, salt little oil....Sprinkle water and make  a soft dough.
# Dry roast Poppy seeds...once cooled grind to a powder.
# Mix grinded Poppy seeds, Powdered sugar, Dry coconut grated, Cardamon powder....mix everything well. (Stuffing is ready)
# Make marble size balls of Wheat dough.
# Make a cup shape fill a 1.5 tsp of filling seal well ...make a Chappathi with a rolling pin. Not very thick / thin.
# Heat a tawa add ghee/ oil place the rolled hollige and cook both sides by applying ghee / oil. 
# Once both sides are cooked well remove and enjoy with ghee.

Varagu Arisi Pongal

Varagu Arisi Pongal/ Kodo Millet Pongal 
Varagu Arisi/ Kodo millet Pongal is an excellent recipe which can be made for breakfast/ during Tiffin. 
Ingredients:
Kodo millet- 1 cup
Moong dal- 1 cup
Cashews- few
Crushed Pepper- 1/2 tsp
Crushed cumin - 1/2 tsp
Ghee - 2 tablespoons 
Curry leaves few
Asafoetida- 1/4 tsp
Salt to taste 
Method:
# Wash and soak kodo millet for 2-3 hrs.
# Wash Moong dal well.
# Mix Moong dal and soaked millet add 2.5 cups of water and Pressure cook for 3-4 whisles.
# Once pressure is released mash the Pongal well. Add Salt and Asafoetida and give a good stir.
# Heat a pan add ghee add cashews, crushed pepper, crushed cumin. Let the Cashews change its colour add to the Pongal and mix well. Add curry leaves and mix.
Pongal is ready to serve.

Oats Rava Idli

Oats Rava 
Good Morning!
Oats Rava Idli is an easy, delicious recipe perfect for a breakfast/ tiffin time.
Ingredients:
Oats - 1 cup
Rava - 1cup
Curd - 1.5 cups
Oil - 1 tsp
Green chilli- 1 finely chopped 
Ginger - 1/2 inch finely chopped 
Mustard seeds - 1 tsp
Asafoetida- 1/4 tsp
Curry and coriander leaves- finely chopped 
Baking soda- 1 pinch
Salt - as per your taste 
Method:
# Roast Oats for few seconds and pulse in a mixer jar.

# Add oil in a kadai, add mustard let it crackle well add green chilli's, ginger, Corriader and Curry leaves scared well...add rava and roast for few minutes. Let the aroma come out well.

# Whisk curd add coarsely grounded Oats, roated rava with tempering, salt, asafoetida, 1/2 cup water. Mix well. Let it rest for 15-20 minutes.

# Steam the idli pan. Grease the idli plates with oil. 

# Add Baking soda to the batter whisk well.

# Pour the batter in the idli plates and steam for 15-20 minutes.
Once Oats Rava Idli is ready serve with some chutney.

Kasi Halwa

Kasi Halwa 
Good Morning!
Kasi Halwa / Poosanikai halwa is a traditional sweet prepared for wedding menu in SouthIndia specially in Tamilnadu. 
Kasi Halwa is made with grated white Pumpkin, sugar, ghee.
Ingredients:
White Pumpkin- 1 cup
Sugar - 1/4 cup
Ghee- 3 tablespoons 
Cashew + melon seeds - 1 tablespoon
Cardamom powder- 1/2 tsp
Yellow food colour few drops
Method:
# Heat a pan add 1 tablespoon of ghee, add the grated Pumpkin and saute on medium flame. Make sure the water evaporates and it becomes completely dry. 
# Add sugar, food colour and cook on medium flame....it will become watery. 
Let it become a semi solid consistency...add Cardamom powder mix well and switch off the flame.
# Heat ghee in another pan fry cashews and melon seeds pour to the halwa. 
Make sure you do not over cook after adding sugar...as it may become  hard / crystallized.
Serve hot or cold.
