An eggfree Strawberry Cake which is super soft and perfect for a tea time.
Ingredients:
Fresh Strawberry Compote - 4 tablespoons
Refined flour - 1 cup (250 gms)
Sugar - 100 gms
Curd - 200 gms
Whipping cream - 100 ml
Baking soda - 1/4 tsp
Baking powder - 1 tsp
Vanilla essence - few drops
Homemade Strawberry Compote:
Strawberries - 200gms
Sugar - 100 gms
Wash strawberries, chop them add sugar.
On a low flame cook the strawberries, once it becomes thick switch off the flame and allow it to cool down completely.
Method:
Seive refined flour for 2 times.
# Mix curd and sugar well.
# Add baking soda and baking powder Wait for 30 seconds (small froth will appear).
# Add Whipping cream and mix well.
Add vanilla essence, refined flour in two batches.
The cake batter consistency should be not too thick or thin.
Preheat the oven with 170'c for 10 minutes
# Grease the baking tin with oil / butter.
# Pour the cake batter in the greased tin just add strawberry compote and use a spoon to mix gently.
Cake tin size (7×3)
Bake the cake for 30 minutes at same temperature.
Check by inserting a knife...it it comes out clean (cake is baked well).
After 5 minutes unmold the cake and let the cake cool down on the wire rack.
Slice the cake and enjoy.
