Vazhathandu Rice (Banana stem rice)

Vazhathandu Rice (Banana stem Rice 
A Fibre rich variety rice recipe which is super delicious and takes just few minutes to prepare.
The best part of this rice is until you tell anyone that this is banana stem...no one cake guess the rice.
Ingredients:
Banana stem - 1 long piece 
(Finely chopped)
Cooked rice - 1 cup
Oil - 3 tablespoons 
Mustard seeds - 1 tsp
Peanuts - handful 
Urud dal - 1tsp
Turmeric powder - 1 pinch
Red chilli powder - 1/4 tsp
Asafatedia - 1 pinch
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Curry leaves - few
Salt as per taste 
Method:
# Finely chop vazhathandu/ banana stem. (Add the chopped stem to water...it change its colour. 
# Heat a pan add oil, let it get warm...add mustard(wait till it crackle well) add urud dal and peanuts (wait till it becomes roasted) add chopped stem (squiz) well and add. Saute well add all the dry masala powder with salt. Sprinkle little water cover it for 3-4 minutes.
# once cooked well add rice and mix well.
Add curry leaves and mix well.
You can serve with raita or papad.

Peanut butter Cookies

Peanut Butter Cookies 

Peanut butter Cookies are super delicious and easy to make.
Ingredients:
All purpose flour - 250 gms 
Peanut butter - 80 gms
Jaggery powder - 125 gms
Baking powder - 1 tsp
Vannilla essence - few drops 
Method:
# Seive flour with baking powder.
# Mix peanut butter & jaggery well. (It should become like a smooth cream)
# Add vanilla essence to the butter jaggery mixture.
# Mix the seived flour with wet ingredients. Do not over mix.
# Preheat your oven @170'c.
# Grease the baking tray with oil / butter.
# Take small portions of cookie dough place it in baking tray.
# Bake at same temperature for 12-13 minutes. Once done cool on a wire rack and enjoy with tea / coffee.

Strawberry Cake (eggfree)

Strawberry Cake (Eggfree)
Good Afternoon 
An eggfree Strawberry Cake which is super soft and perfect for a tea time.
Ingredients:
Fresh Strawberry Compote - 4 tablespoons 
Refined flour - 1 cup (250 gms)
Sugar - 100 gms
Curd - 200 gms
Whipping cream - 100 ml
Baking soda - 1/4  tsp
Baking powder - 1 tsp
Vanilla essence - few drops 
Homemade Strawberry Compote:
Strawberries - 200gms
Sugar - 100 gms
Wash strawberries, chop them add sugar.
On a low flame cook the strawberries, once it becomes thick switch off the flame and allow it to cool down completely.
Method:
Seive refined flour for 2 times.
# Mix curd and sugar well.
# Add baking soda and baking powder Wait for 30 seconds (small froth will appear).
# Add Whipping cream and mix well.
Add vanilla essence, refined flour in two batches.
The cake batter consistency should be not too thick or thin.
Preheat the oven with 170'c for 10 minutes 
# Grease the baking tin with oil / butter.
# Pour the cake batter in the greased tin just add strawberry compote and use a spoon to mix gently.
Cake tin size (7×3) 
Bake the cake for 30 minutes at same temperature.
Check by inserting a knife...it it comes out clean (cake is baked well).
After 5 minutes unmold the cake and let the cake cool down on the wire rack.
Slice the cake and enjoy.

A delicious vegan salad made with few ingredients.
Ingredients:
Boiled chickpeas - 1 cup
Beetroot - 2 medium size
Green chilli - 1 no
Ginger - 1/2 inch
Coriander leaves - for garnish 
Lemon juice - few drops
Salt as per taste 
Method:
# Mix all ingredients add lemon juice mix well and enjoy.
