Badusha/ Balushahi

Badusha / Balushahi ( Airfried Version)


Badusha / Balushahi are crispy, flaky from outside and soft, juicy from inside. This is a very popular sweet recipe which is made in India for festivals like Diwali, Dusshera, Holi etc. 
I'm sure we all try to make healthy, simple, easy recipes for festivals...this is made with whole wheat flour and jaggery syrup which is Airfried. The same recipe can also be deep fried / baked.
With this measurement you will get 15-17 badusha's.
Notes:
* You can bake these badusha's @ same temperature as mentioned below.
Ingredients:
Whole Wheat flour - 1 cup / 130 gms
Ghee / melted butter - 1/2 cup
Curd - 2 tablespoons
Baking soda - 1/4 tsp
Jaggery - 3/4 - 1 cup
Chilled Water - 1/2- 3/4 cup (125 ml)
Cardamom powder - 1/2 tsp
Method:
# Cream ghee, curd and baking soda.
# Add whole wheat flour mix well. Sprinkle chilled water make a dough. Donot knead just bring together.
# Cover the dough, let it rest for 10-15 minutes.
# Boil jaggery and water. Filter it to remove impurities. 
# Boil for 5-7 minutes, add cardamom. You need 1 string consistency. Switch off.
# Preheat Airfrier@140'c for 5-7 minutes.
# Make lemon size balls and press gently in the centre.
# Arrange them in Airfrier and fry @ 140'c for 20 minutes.
# Once badusha's are fried soak them in warm jaggery syrup for just 10 minutes.
# After 10 minutes arrange them in a plate and allow it to rest for 1-2 hrs.
Serve Badusha's and provide your comments.

Pasta Cutlets


Pasta Cutlets
Cutlets are crispy from outside and soft from inside. These can be deep fried, shallow/ Airfried. These cutlets are made with leftover pasta, mashed potatoes, capsicum, mixed with spices and Airfried. 
To make pasta you can follow the instructions mentioned in the instant pasta pack.
Ingredients:
Leftover pasta - 1 cup
Mashed potatoes - 2 medium size
Chopped onion- 1/4 cup
Chopped capsicum - 1/4 cup
Red chilli powder - 1/2 tsp
Cumin/ jeera powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt - 1 tsp
Vermicelli - 1/2 cup
Refined oil - 1.5 tsp (brush before Airfry)
Method:
# Mix pasta, mashed potatoes, onion, capsicum, salt, cumin powder, red chilli powder, garam masala.
# Shape the cutlets coat them with vermicelli.
# Refrigerate for 1/2 hr.
# Brush some oil and Airfry at 200'c for 20-25 minutes.
# Paste cutlets are ready to serve.

Chirote / Chiroti

Chirote / Chiroti
Chirote is a popular sweet recipe which is super crispy layered and flaky with mild sweet. I have used whole wheat flour and Airfried but these can be deep fried.

Ingredients:
Whole wheat flour - 1 cup
Rice flour - 2 tablespoons
Ghee / butter - 2 tablespoons
Cardamon  powder - 1 tsp
Oil - 1 tablespoon (brush chirote)
Butter - 2 tsp (while kneading dough)
Powdered sugar - 1/4 cup

Method:
# Cream ghee/ butter and rice flour.
# Mix whole wheat flour and butter to get bread crumbs consistency. Add little water and knead dough. Dough should be stiff.
# Cover it and let the dough rest for 15 minutes.
# Divide the dough into marble size balls.
# Use rolling pin and roll in thin flat bread / chapati. You can dust some flour and roll.
# Apply butter & flour mixture...and dust some rice flour. Repeat for all chapati. I used 7 chapati's.
#Roll to form a log shape.
# Cut the log in 10-12 equal portions.
# Again roll like we do for puri.
# Mix cardamon powder and powdered sugar.
# Preheat Airfried @ 180'c for 5 minutes.
# Place the layered puris and fry @ 180'c for 15 minutes. Inbetween brush some oil and flip.
# Once fried sprinkle powdered sugar.
#Let it cool completely then store in an airtight container.

Bread Khaja

Bread Khaja
Bread Khaja is a perfect dessert / sweet dish served for get-together/ parties. In 10-15 minutes you can prepare a quick, easy, non-fried /zero oil/ zero butter sweet dish.

Steps and ingredients:
Bread slices - 5-6 nos
Sugar - 1/4 cup
Water - 1/4 cup
Cardamom powder - 1/2 tsp
Chopped almonds and pistachios - 1 tsp

Method:
# Trim the edges of bread slices and give a rectangular shape.(any shape which you like)

# Fry bread pieces in Airfrier @ 180'c for 15 minutes.


# Make sugar syrup by adding sugar and water.
Boil well no need of string consistency. (just sticky consistency) Add cardamom powder switch off the stove.


# Once bread slices are fried golden colour, dip them in sugar syrup for 30 seconds.

# Remove on a serving plate garnish with chopped almonds and pistachios. 

* For me it took 15 minutes to fry bread pieces. It might take slightly longer time ( 3-5 minutes) extra... depends upon your Airfrier.

Masala Vadai / Masala Vadas

Masala Vadai / Masala Vadas
Masala Vadas are South Indian Special tea-time snacks which are generally deep fried and served with tea/ coffee. Today I'm sharing an Airfried version.

Ingredients:
Channa Dhal - 1 cup
Onion - 1 medium size
Fennel seeds - 1 tsp
Asafatedia - 1 tsp
Ginger - 1 inch
Red chillies - 2 nos
Green chillies - 1 no
Oil - just to brush
Salt - to taste
Chopped curry leaves and coriander leaves.

Method:
# Soak channa dhal for 1 hr. Drain the water.
# In a mixer jar add fennel seeds, red chilli, green chilli, ginger and grind without adding water. Add channa dhal in the mixer jar and grind. (no need to add water) 
# In a bowl add grinded channa dhal, chopped onion, curry leaves, coriander leaves, asafatedia and salt and mix well.
# Preheat your Airfrier for 5 min @ 200'c.
# Take marble size balls from the grinded mixture and slightly press to give shape of the Vadas.
# Arrange them in Airfrier and fry @200'c for 15 min. Inbetween brush oil and turn the Vadas.
Total time taken to fry these Vadas are 20 minutes. When you fry the second batch of Vadas it will take 15-17 minutes.
These Vadas will not stick to the Airfrier basket.
Serve them with chutney or ketchup.

Beetroot Kofta

Beetroot Kofta (Airfried Version)
Kofta is a deep fried recipe... which is served with rice or Indian bread. Today I am sharing a Non-fried kofta which is prepared with beetroot.
Ingredients:
Boiled beetroot - 2 medium size
Boiled Potato                - 1 medium size
Onion                  - 2 medium size
Tomato               - 3 medium size
Gram flour          - 2 tsp
Bread crumbs    - 1/4 cup
Khoa                    - 2tablespoons
Jeera                   - 2 tsp
Ginger                 - 1 inch
Turmeric powder- 1/4 tsp
Red chilli powder - 1/2 tsp
Garam masala powder - 1 tsp
Dhania / corridor powder - 1 tsp
Oil                                    - 1 tablespoon
Salt to taste
Coriander leaves to garnish
Salt to taste
Method:
# Pressure cook beetroot and potato.
# Mash boiled beetroot and potato together. Add gram flour / besan, turmeric powder, red chilli powder, garam masala, salt, dhania / cumin powder and mix well...add some bread crumbs and make balls.



# Coat the balls with bread crumbs.


# Preheat Airfrier @ 200'c for 5-7  minutes.
# Fry the kofta in Airfrier @ 200'c for 20 minutes. Inbetween check.


# Chop onion and tomatoes, ginger and saute in little oil. ( make a fine paste)
# For gravy heat a pan add oil, add jeera / cumin, onion tomato paste with salt, red chilli powder, garam masala, turmeric, dhania powder and saute well. Add khoa / Mawa with little water...let it boil well. Once it comes to gravy consistency add coriander leaves and switch off your stove.

# Add Airfried Kofta with gravy... garnish with chopped coriander leaves and serve.
* You can add the dry masalas according to your taste.
