Savoury Cheese Rolls

Savoury Cheese Rolls 
Savoury Cheese Rolls are super soft, delicious, tasty Rolls filled with  tomato ketchup, freshly chopped coriander leaves, processed cheese and some basic Indian spices.
A healthy whole wheat buttery Rolls filled with Savoury filling. You may try filling of your choice.
Ingredients:
Whole Wheat flour- 2 cups / 240 gms
Jaggery powder- 1.5 tsp
Dry active yeast - 1 tsp
Salt - 1/2 tsp
Butter - 3 tablespoons 
Milk - 1/4 cup
Luke warm water- 1/2 cup / as per the dough required 
Filling 
Tomato ketchup/ sauce - 4 tablespoons 
Chopped coriander leaves- 1/4 cup
Chilli powder- 1/4 tsp
Salt - a pinch
Cumin powder- 1/4 tsp
Processed cheese- 3 tablespoons 
Method:
# Mix wheat flour, active dry yeast, jaggery powder, salt, milk and 1/4 cup water. Make a soft dough. Stretch and fold. Add butter and knead a dough. It takes 15-20 minutes to make this dough. 
# Apply oil and cover it for1 hr / until it doubles in size.
# Once dough rises well punch down. Remove excess air and knead for 2-3 Minutes. If the dough is very sticky add so.e wheat flour/ 2 tsp of oil and knead.
# For filling mix, tomato ketchup, coriander leaves, spices, cheese.
# Roll the dough in rectangle shape with 1/2 inch width. Apply the filling and stard folding like we do for pin wheel shape. 
# Grease the baking tin with oil/ butter.
# With a help of a tread / knife cut the rolls.
# Arrange them in baking tray.
# Cover with  a cloth and let it rise again. It takes 15-20 minutes.
# Preheat oven @ 190'c.
# Bake at same temperature for 25-30 minutes.
# Once Baked cover with a wet cloth for 10 minutes.
# Demold on a wire rack.
Serve warm with Soup.

Double Chocolate Ragi whole Wheat Cake

Double Chocolate Ragi Whole Wheat Cake 
Good morning 
An eggfree Double Chocolate Ragi Whole Wheat Cake. This is a delicious, moist. chocolatee cake perfect for a tea break.
A healthy cake which is sweetened with Jaggery powder.
1cup=120gms
Ingredients:
Ragi flour- 1/2 cup
Whole Wheat flour- 1 cup
Jaggery powder- 1/2 cup 
Water - 1/4 cup
Ghee residue- 2 tablespoons 
Fresh cream - 1 tablespoon
Dark chocolate - 70 gms
Baking powder- 1 tsp
Method:
# Sieve whole wheat flour, ragi, baking powder for 3-4 times.
Preheat microwave oven at convection mode @ 170'c.
Grease the baking tin with oil. Baking tin size 7×4.
#Melt chocolate in microwave/ double boiling Method.
# Add ghee residue to melted chocolate, jaggery powder, warm water, Fresh cream and whisk well.
# Mix the sieved flour in 2batches with the wet ingredients.
# If the batter is too thick you can add 2 tablespoons of warm water and mix well.
# Pour the batter in the greased tin.
# Bake at 170'c for 30-35 minutes.
# Check by inserting a skewer.
Once Baked demold after 10 minutes on a wire rack.
Slice the cake after it completely cools down.

Whole Wheat Bagels

Whole Wheat Bagels 
Bagels are shiny, crispy, chewy and dense in taste and texture.  These Bagels are made with  whole wheat flour.
Ingredients:
Whole Wheat flour - 200gms
Instant dry yeast - 1.5 tsp
Salt - 1 tsp
Jaggery powder / sugar - 1 tablespoon
Water - 3/4 cup / 200ml 
Sesame seeds (white+black) - 1 tablespoons 
Poppy seeds - 1 tablespoon
Oil - 1 tablespoon

Method:
# Mix flour, Jaggery powder, yeast, salt.
# Add Luke warm water and start kneading the dough. Sprinkle  water and knead...until you get a smooth, soft dough. Apply oil and allow the dough to rise / double in size. It takes 1 hrs. 
# Once dough rises/ doubles...slightly punch and divide the dough to 7-8 parts.
# Boil 2 cups of water.
# shape the bagels, by placing a hole in the center as we do for donuts.
# Drop the shaped bagels into the  boiling water. After 2 Minutes  flip.
# Preheat oven @ 180'c.
# Grease the baking tin. Arrange the  bagels in baking tin...Sprinkle  Sesame seeds and Poppy seeds.
# Bake at same temperature for 20-25 Minutes.
Whole Wheat Bagels are ready to serve.

Soaked Dried fruits for Christmas Fruit Cake

Dried fruits soaked in tea decoration for 24 hrs.



Delicious, rich, soft, moist, super aromatic Christmas Fruit Cake. For Christmas Cake dried fruits plays one of an important ingredient. I've already shared an eggfree Christmas cake with dried fruits soaked in orange juice. 
You can soak dried fruits in fresh orange juice/ store bought orange/ grapes juice.

Today I'm sharing a tea infused / tea decoction in which dried fruits and nuts are soaked. This gives a wonderful flavour to the Christmas Fruit Cake.
Dried fruits and nuts:
You can choose any mix of dried fruits which you prefer / easily / affordable. Such as:
Raisins, black raisins, sultanas, blue berries, cranberries, prunes, glazed cherries, dates, dried apricots, candid fruits such as gooseberries/ amla, tutti-fruty.
I have added 1/4 cup of each dried fruits and nuts.
Chopped nuts:
Walnuts, cashew, almond, pistachio.
Spices:
Cinnamon, clove, mace, cardamom

Chopped nuts and dried fruits:
Chop dried fruits to small / 1cm in size.

To make tea decoration:
Boil 500 ml of water/ 2 cups, add 3-4 tsp of tea powder/ leaves, whole cinnamon 2 inch, 3-4 cloves, less than 1/4 tsp of grated mace, 3 cardamom. Boil until it becomes a thick decoction. It takes approximately 10-12 minutes. Strain the decoction and allow it to cool down completely.

Container to soak dried fruits:
Always use sterilised glass containers to soak dried fruits and nuts.

Soaking:
Add the chopped dried fruits and nuts to the tea decoration, give a good mix cover it with a lid and allow it to soak well. You can soak  minimum of 2-3 hrs. Or overnight is fine. 
If you wish to soak for couple of days / for a week then store it in refrigerator. 
The dried fruits will be pulpy, oozy, boozy.
You can add nuts while soaking / can add while preparing the batter as it gives a nice crunch. I always add half the quantity while soaking and add some while mixing the batter.

Notes:
Always strain the soaked dried fruits and nuts and add to the cake batter. If you feel the batter is very thick, can add a tablespoon of soaked liquid. If you add soaked dried fruits will liquid in cake batter it may become runny / cake can be soggy in texture.

Brownies

Brownies
Brownies are dense, rich, fudgy, chewy, chocolatee in taste and texture. When you bake for longer time it becomes more like a cake. The perfect texture depends upon the baking time.
Today I'm sharing a healthy brownies made with whole wheat flour and palm jaggery. You can substitute with normal jaggery / brown sugar / cane sugar.
Notes:
1 cup = 120 gms (flour)
1 cup = 200 gms ( jaggery / sweetner
Baking tin - 8' rectangular shape
Ingredients:
Whole Wheat flour - 180 gms / 1.5 cups
Palm jaggery - 100 gms / 1/2 cup
Baking powder - 1 tsp
Cocoa powder - 2.5 tablespoons
Salt - 1/2 tsp
Chocolate - 150 gms
Vanilla essence - 1/2 tsp
Melted butter/ melted ghee - 120 ml
Peanut butter - 2 tablespoons
Milk - 2-3 tablespoons
Method:
# Sift whole wheat flour, baking powder, cocoa powder, salt for 4-5 times.
# Add 1/4 cup of water to palm jaggery and melt. Fillter the palm jaggery syrup to remove impurities.
# In a wide bowl add melted ghee, palm jaggery syrup chopped chocolate, vannila essence. Switch on the stove and mix together until you get a sauce consistency. 
# Allow it to rest for 5 minutes / until it becomes warm.
# Grease you baking tin with oil / butter/ use butter paper.
# Preheat microwave convection oven @ 170'c.
# Add sifted flour to the chocolate sauce / wet ingredients in two batches.
# It will be very thick in consistency add 2-3 tablespoons of warm milk and mix well.
# The batter should be thicker than pouring consistency. Pour the brownie batter in the greased baking tin.
# Add 2 tablespoons of peanut butter and spread it with a spoon. You can add some chopped walnuts / chocolate chips.
# Bake @ 170'c for 20-23 minutes. Check by inserting a knife / toothpick...it should slightly stick. 
# Allow it to cool for 5-10 minutes. Demold on wire rack and let it cool down completely.
Cut the Brownies and serve with tea/ coffee / milk.

Pav Buns (water roux method)

Pav Buns (water roux method)
Pav Buns are delicious when served with bhaaji or potato curry. These are made with whole wheat flour and sweetner used to make buns are jaggery powder with roux method / tangzhong method which gives a super soft texture.
Water roux method is a combination of water and flour which is cooked to form a custard. The custard is used in making buns, bread etc.
Ingredients:
To make custard:
Whole Wheat flour - 1.5 tablespoons
Water - 1/4 cup ( slightly 1 tablespoon more)
Pav Buns:
Whole Wheat flour -250 gms / 2 cups approx
Instant active dry yeast - 1.5 tsp
Jaggery powder - 1 tablespoon
Oil - 2 tablespoons
Salt - 1.5 tsp
Milk powder - 2 tablespoons
Milk - 1 tsp (brush before you bake)
Butter - 1 tsp (apply after you bake)
Water - 1/2 cup + as required.
Method:
# To make water roux method mix flour + water without lumps, cook on medium flame until it becomes a smooth custard. Cover with cling wrap. Allow it to cool down completely.
# Mix whole wheat flour, yeast, milk powder, jaggery powder, salt, wheat custard.
# Add water 1/4 cup and start kneading. It will be sticky in texture add 1 tsp of oil in intervals and sprinkle water as required.
# It takes 15-17 minutes to make a smooth, elastic dough.
# Apply oil and place the dough in well greased bowl for proofing. It takes 45 minutes-1 hr.
# Once dough doubles in size punch down remove excess air add 1 tsp of oil and knead for 2-3 minutes.
# Grease the baking tin. Divide the dough in balls and place in the baking tin with a gap as the dough expands / 2nd proofing. (Baking tin size 8×3). Cover it for proofing for 20-25 minutes.
# Preheat microwave convection oven@190'c.
# Apply milk wash and bake @ same temperature for 20-22 minutes.
# Once baked well apply butter. Allow it to cool for some time and demold. Allow it to cool down completely on wire rack.
Whole Wheat Pav Buns are ready to serve.

Thandai masala Cookies

Thandai Masala Cookies

Healthy cookies made with porridge flour (ragi porridge flour) powdered oats,  jaggery, with zero baking powder and zero baking soda. I've used Thandai masala powder you can use vanilla essence / extract.
You can even use homemade porridge flour(sprouted ragi flour, wheat, nuts etc) 
Notes:
* Dry roast the flour slightly before using.
* Sieve the flour for 3-4 times.
Ingredients:
Porridge flour - 1 cup / 110 gms
Powdered oats - 2 tablespoons
Powdered Jaggery / powdered sugar - 1/4 cup
Butter - 1/2 cup
Thandai masala powder - 1 tablespoon
Milk - 2 tablespoons
Method:
# Sieve porridge flour for 3-4 times. Mix oats powder and porridge flour well.
# Cream butter and powdered Jaggery. Mix Thandai masala.
# Add oats+porridge flour to the creamed butter mixture. Add milk and make a dough. Do not knead...just mix.
# Give log shape and refrigerate for 20 minutes.
# Cut the log in 1 inch thick.
# Preheat microwave convection mode @ 170'c.
# Grease the baking tin with oil/ butter...arrange the cookies.
# Bake at same temperature for 10 minutes.
# While baking the second batch reduce the timing as it may over bake.
# Allow it to cool on wire rack.
# Store in an Airtight container.
