Maamoul (Date filled Cookies)

Maamoul (Date Cookies)
Maamoul is a Date filled Cookies very popular in Middle East. These are crispy filled with date stuffing. This can be easily stored in room temperature for couple of weeks. Most popular filling are with Dates, Walnuts and Pistachios.
In traditional recipe after baking confectioner sugar is coated. I skipped this step. Traditionally orange blossom / rose water/ spiced powder are used as flavour. You may use any of these flavours.
There are mold available to make Maamoul but I didn't have...so just kept the filling and baked.
I came to know about these cookies from a fb group where we share only Healthy Baking with healthy flour and healthy sweetner.
You may even use baking powder in case you don't have yeast.
Ingredients:
Fine Semolina / Choriye rava- 1 cup
Whole wheat flour- 1/2 cup
Instant active yeast - 1/2 tsp
Butter- 1/2 cup
Oil- 1/4 cup
Jaggery powder - 1/4 cup
Rose water - 1.5 tsp
Pitted dates - 25 nos
Milk - 1/4 cup
Method:
# Mix semolina, wheat flour, yeast, jaggery powder. (dry ingredients)
# Cream butter and sugar. Mix oil, rose water to the creamed butter. (wet ingredients)
# Add dry ingredients with wet ingredients with milk to form a dough. Cover the dough for 1/2 hr. 
# Microwave dates for 30 sec and pulse it in mixie or use food processor to form a smooth mass.
# Make small balls of the date filling.
# Take a small marble size ball flaten it keep the filling. Bring the edges together and slightly press. I just gave impression with a fork.
# # Meanwhile preheat microwave convection oven @ 180'c.
# Grease a baking tin arrange the cookies.
# Bake at 180'c for 15 minutes.
# Allow them to cool on wire rack.
Store the Maamoul / Date Cookies in an Airtight container.

Karachi Biscuits

Karachi Biscuits
Today I'm sharing whole wheat Karachi Biscuits. These are very popular in Hyderabad bakeries. Karachi Biscuits are buttery, crunchy, melt in the mouth.
Ingredients:
Whole wheat flour - 3/4 cup 
Unsalted butter - 1/2 cup
Powdered sugar - 1/2 cup
Milk powder - 2 tablespoons
Custard powder - 2 tablespoons
Tutti-Frutti - 2 tablespoons
Baking powder - 1 tsp
Salt - 1/4 tsp
Pineapple essence - 1 tsp
Method:
# Sieve whole wheat flour, custard powder, baking powder and salt. (dry ingredients)
# Mix milk powder to dry ingredients.
# Cream butter and powdered sugar.
# Add pineapple essence and tutti- frutti to butter sugar mixture.
# Mix dry ingredients and butter mixture.
# Give a log shape, cling wrap and refrigerate for 30 minutes.
# Preheat oven / microwave convection mode @170'c.
# Cut the biscuits with 1/4 inch.
# Grease baking tin with oil/ butter.
# Arrange the biscuits in baking tin and bake @ 170'c for 12-15 minutes.
# Once baked allow it to cool on wire rack.
Store the biscuits in an airtight container.

Jeera Biscuits

Jeera Biscuits
Jeera Biscuits are perfect for afternoon tea-time. These are mild sweet and savoury biscuits with cumin/ jeera flavour. 
Ingredients:
Whole wheat flour - 1 cup ( 120 grams)
Jaggery syrup - 2 tablespoons
Butter - 1/2 cup 
Baking powder - 1 tsp
Salt - 1 tsp
Jeera - 1.5 tsp

Method:
# Dry roast and crush jeera / cumin.
# Sieve whole wheat flour, baking powder, salt for 5-6 times.
# Mix butter, jaggery syrup, sieved flour, crushed cumin/ jeera to make a dough.
# Roll the dough to a thin chappati / flat bread. Use a cookie cutter to cut / shape your biscuits.
# Grease the baking tin with oil / butter. Arrange the biscuits.
# Preheat your microwave convection mode @160'c.
# Bake @ 160'c for 12 minutes.
Once baked remove on a wire rack and cool completely.
Store in an airtight container.

* Consistency of jaggery syrup is like honey.
* While baking second batch of biscuits reduce the time to 10 minutes.
* You can bake in Airfrier @ 160'c for 10 minutes.
* Kadai - add salt in the base and cover with a lid preheat for 12 minutes on medium flame. Place  a ring mould. Place the biscuits in a plate cover with a lid and bake on medium flame for 15-20 minutes. Keep checking once it changes colour can remove and allow it to cool.
* Baking in pressure cooker and kadai are same. If you bake in pressure cooker remove gasket and whistle.

Mini Cherry Biscuits ! Valentine's Day Special - (Airfryer Recipe)

Mini Cherry Biscuits! (Airfrier Recipe)
     A Valentine's Day Special biscuits, with minimum ingredients you can have crispy mouth watering biscuits. I have given heart shaped to these biscuits, but you can give any shape of your wish.

Ingredients:
All purpose flour - 100 grms / 1 cup
Powdered sugar - 1 tablespoon
Baking powder - 1/2 tsp
Vanilla essence - few drops
Cherries - 1/2 cup
Method:
# Seive all purpose flour and baking powder.
# Mix butter and powdered sugar well, till it becomes creamy or forth.
# Add Vanilla essence, chop cherries well and add.
# Mix dry ingredients with butter and powdered sugar. It will take 5-10 min to knead well. ( No need of water or milk )
# Take a small portion of the dough and roll it in 1/2 inch thickness. Give desired shape to your biscuits.
# Preheat Airfrier at 160'c for 5 min.
# Arrange the biscuits in tray, it should not stick to each other.
# Bake for 5- 10 min @ 160'c. Once done keep it in room temperature for 30 min and serve.
