Ragi Porridge

Ragi Porridge 
Good Morning!
Ragi / Fingermillet is an excellent source of iron, calcium, fiber and vitamin D which can be included in our regular diet. Ragi Porridge is an easy and comfort food for all ages....with minimum ingredients.
Ingredients:
Ragi flour- 2 tsp
Milk- 1/2 cup
Water - 1/4 cup
Jaggery powder- 1.5 tablespoons 
Cut fruits of your choice 
Method:
# Boil milk and water together.
# Add Ragi flour and stir constantly until it cooks well and becomes thick.
# Add Jaggery powder stir well and switch off the flame.
# serve with cut fruits of your choice.

Carrot Rice

Carrot Rice
Good Morning!
Carrot Rice is a delicious, healthy variety rice which can be packed as  lunch box for kids and office-goers.  You can add onion's in this recipe.
Ingredients:
Cooked rice - 1 cup
Carrots - 2 medium size (finely chopped)
Field beans/ green peas - fistful
Mustard seeds - 1 tsp
Jeera/ cumin - 1/2 tablespoons
Urud dal -1/2 tsp
Channa dal - 1 tsp
Ginger - 1/2 tsp finely chopped
Green chilli - 1/2 tsp finely chopped
Turmeric powder - 1/4 tsp
Coriander powder - 1/2 tsp
Garam masala- 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Coriander leaves and mint leaves for garnish.
Method:
# Heat a pan add oil, mustard, let it splutter well, add jeera, urud dal, channa dal, let it slightly change its colour, add ginger, green chilli, carrot, field beans/ mochai, saute well. 
# Add dry masala's and salt. Sprinkle water and cook on slow flame. 
# Once cooked add rice, drizzle some oil and mix well. Garnish with coriander leaves and mint leaves.

Bread Upma

Bread Upma
Bread Upma is a simple, quick, easy colourful breakfast recipe which takes just 5-7 minutes.

Today I'm using homemade semolina bread.

Ingredients:
Bread slices - 7-8 nos
Grated carrots - 2 tablespoons
Chopped onion - 1 medium size
Peanuts - 2 tsp
Chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Mustard / Rai - 1 tsp
Salt - 1/2 tsp
Refined oil - 1 tablespoon
Chopped coriander for garnish

Method:
# Cut bread slices in squares.

# Heat a pan add oil, peanuts slightly fry them add mustard let it crackle well, put chopped onion fry until it becomes transparent add grated carrots, salt, turmeric, chilli powder sprinkle water mix well and close the pan for 2 minutes.

# Mix well add bread pieces and stir well. On low flame let it be for 2 minutes. Add chopped coriander leaves mix well and serve.

Boost Cookies ( Airfried Recipe)

Boost Cookies (Airfried Recipe)
Cookies are easy and delicious recipe which is loved by everyone.....this recipe is a variation of Culinary labs (Pradeepa Nair's recipe)...I just made slight changes and it came out well. These cookies are my daughter's favourite. 

In this recipe you can add health drinks such as Boost, Horlicks, Badam mix, Bournvita, Viva etc...
I had some boost powder in my kitchen so I tried with it. This is a simple recipe with whole wheat flour, Bura sugar which is a good alternative compared to all purpose flour / maida.


The same recipe can be prepared in pressure cooker, microwave convection mode, otg and even in kadai, for the time and temperature mentioned below.


Ingredients:
Whole wheat flour - 150 grms approx
Bura sugar - 80 grms
Boost (RS 5 packet ) - 3 sachets
Butter - 100 grms
Corn flour - 1 tablespoon
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Cocoa powder - 1 tablespoon
Milk - 1-2 tablespoons)
Chopped nuts walnuts & cashew - 2 tablespoon
Vanilla essence - few drops

Method:
# Sieve whole wheat flour, corn flour, baking powder, baking soda, cocoa powder. (dry ingredients)
# Cream your butter and bura sugar (powdered)...it should be light and creame. (wet ingredients)



# Add essence with butter mixture.(wet ingredients)

# Mix boost with dry ingredients.

# Mix chopped nuts with dry ingredients.

# Mix dry ingredients with wet ingredients ....add milk and knead the dough. Can sprinkle little water to prepare the dough.Not very smooth.


# Refrigerate your dough for 1/2 hr.
# Preheat Airfrier @ 160'c for 5 minutes.
# Prepare small portion and give  shape to the cookies and give impression with a fork.
# Airfry the cookies at same temperature for 20 minutes. Once done let it cool completely and store in an airtight container.



* Microwave conversation mode - preheat @ 160'c and bake @ same temperature for 15 minutes.
* Pressure cooker - add salt or sand at the bottom of the cooker and preheat for 10 min...bake cookies on medium flame without gasket, without whistle for 35-40 minutes.
* Otg mode - 160'c for 12-15 minutes.
* Kadai - spread sand or salt using a ring mould and preheat for 10 minutes. Then bake cookies for 35-40 minutes. Cover the kadai with a lid or plate.
