Thandai masala Cookies

Thandai Masala Cookies

Healthy cookies made with porridge flour (ragi porridge flour) powdered oats,  jaggery, with zero baking powder and zero baking soda. I've used Thandai masala powder you can use vanilla essence / extract.
You can even use homemade porridge flour(sprouted ragi flour, wheat, nuts etc) 
Notes:
* Dry roast the flour slightly before using.
* Sieve the flour for 3-4 times.
Ingredients:
Porridge flour - 1 cup / 110 gms
Powdered oats - 2 tablespoons
Powdered Jaggery / powdered sugar - 1/4 cup
Butter - 1/2 cup
Thandai masala powder - 1 tablespoon
Milk - 2 tablespoons
Method:
# Sieve porridge flour for 3-4 times. Mix oats powder and porridge flour well.
# Cream butter and powdered Jaggery. Mix Thandai masala.
# Add oats+porridge flour to the creamed butter mixture. Add milk and make a dough. Do not knead...just mix.
# Give log shape and refrigerate for 20 minutes.
# Cut the log in 1 inch thick.
# Preheat microwave convection mode @ 170'c.
# Grease the baking tin with oil/ butter...arrange the cookies.
# Bake at same temperature for 10 minutes.
# While baking the second batch reduce the timing as it may over bake.
# Allow it to cool on wire rack.
# Store in an Airtight container.

Pasta Cutlets


Pasta Cutlets
Cutlets are crispy from outside and soft from inside. These can be deep fried, shallow/ Airfried. These cutlets are made with leftover pasta, mashed potatoes, capsicum, mixed with spices and Airfried. 
To make pasta you can follow the instructions mentioned in the instant pasta pack.
Ingredients:
Leftover pasta - 1 cup
Mashed potatoes - 2 medium size
Chopped onion- 1/4 cup
Chopped capsicum - 1/4 cup
Red chilli powder - 1/2 tsp
Cumin/ jeera powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt - 1 tsp
Vermicelli - 1/2 cup
Refined oil - 1.5 tsp (brush before Airfry)
Method:
# Mix pasta, mashed potatoes, onion, capsicum, salt, cumin powder, red chilli powder, garam masala.
# Shape the cutlets coat them with vermicelli.
# Refrigerate for 1/2 hr.
# Brush some oil and Airfry at 200'c for 20-25 minutes.
# Paste cutlets are ready to serve.

Mug Pasta

Mug Pasta
Simple and easy way to cook pasta in microwave. Even kids can try this recipe and enjoy their snack or evening tiffin. 

Ingredients:
Elbow pasta - 1/4 cup
Cheese - 1 tablespoon
Milk - 2 tablespoons
Whole wheat flour - 1 tsp
Chopped celery - 1 tsp
Mixed herbs - 1/4 tsp
Salt - a pinch

Method:
# In a mug take pasta add 1/4 cup of water and microwave for 20 seconds. (stir in every 10 seconds)

# Sprinkle wheat flour, milk and pinch of salt and microwave for another 20 seconds. (stir in every 10 seconds)


# Add cheese, chopped celery, mixed herbs and microwave for 10 seconds.


# Stir and microwave for another 10 seconds. 
Enjoy Mug Pasta  in just 1 minute.

Rice Cutlet

Rice Cutlet
Rice Cutlets are easy and simple to make for evening snacks. Mix rice, pasta add some seasoning, coat with bread crumbs and fry them. I always use my Airfrier to fry cutlets... but you can shallow fry or deep fry these cutlets.

This is one of my hit recipe during tea-time....you can use any type of pasta with red sauce or white sauce... today I am using elbow pasta with white sauce.


You can use fresh cooked rice and pasta while preparing this recipe.

Ingredients:
Leftover rice - 1 cup
Leftover Pasta - 1 cup
Bread crumbs - 1/2 cup
Chilli flakes - 1 tsp
Oregano seasoning - 1 tsp
Oil - 2 tsp
Salt to taste.

Method:
# In a mixing bowl add leftover rice, pasta, chilli flakes, oregano seasoning and mix well.

# Shape the cutlets and coat with bread crumbs.

# Preheat Airfrier @ 180'c for 5 minutes.

# Place the Cutlets in Airfrier and fry @200'c for 20 minutes. Inbetween we need to brush oil.
# Once cutlets are done serve with ketchup or chutney.

Vegetable Masala Rice - Lunch Box Special!
Vegetable Masala Rice is an excellent lunch box special recipe. A simple and quick recipe with very few ingredients.

In this recipe I added vegetables like potato's, beans, carrots and capsicum....but you can add vegetables of your choice or vegetables which is available in your kitchen.

Ingredients:
Vegetables - 1 cup
(Carrots, beans, potatoes, capsicum)
Cooked Rice - 1.5 cups
Masala powder - 1.5 tsp

(Bay leaf - 1,
Poppy seeds / kasakasa - 1 tsp
Clove - 2-3 nos
Cinnamon - 1 inch
Red chilli - 2-3 nos
Coriander seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Pepper - 4-5 nos)
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Asafatedia - 1/2 tsp
Peanuts - 2 tablespoons
Mustard seeds - 1 tsp
Urud dal - 1/2 tsp
Refined oil / Gingerly oil - 3 tablespoons
Salt to taste

Method:
# Chop vegetables of your choice.

# Dry roast one by one the masala's which I have mentioned in the ingredients.

# Make a fine powder. ( can store this powder in an airtight container for few weeks)

# Heat a pan add oil, add peanuts once roasted add mustard and, urud dal (once mustard splutter) add vegetables, turmeric powder, red chilli powder, asafatedia, salt to taste and sprinkle water and cook well. 

# Add the vegetables mixture with cooked Rice and add masala powder and mix well.

# Add some gingerly oil and salt and mix well.
Garnish with chopped coriander leaves and serve with raita or papads.
* You can add chopped onions, if you wish.
* While boiling rice, add salt.

Jackfruit Seeds Pulav
Jackfruit Seeds provide good amount of dietary fibre, provides antioxidant and has many health benefits....not only fruit is used in cooking but we South Indian's even use its seeds and leaves. The seeds are dried and the skin is removed...and we  prepare recipes like....curry, sabzi, variety rice, pulav, masala bhat etc..

You can serve this recipe with raita, plain curd, dhal, any gravy, sabzi, roasted papads, waffers etc..

We need to remove the outer skin of jackfruit seed, once it is dry he(the white colour skin)

Ingredients:


Jackfruit Seeds - 10-12 nos
Basmati rice / Raw Rice - 1 cup
Onion - 1 medium
Carrots - 1 medium
Green chillis - 1 slit
Ginger - 1 inch finely chopped
Bay leaf - 1-2 nos
Cinnamon - 1 inch
Clove - 1-2 nos
Jeera - 1 tsp
Garam masala - 1/2 tsp
Kasuri Methi / coriander leaves - 1 tsp
Oil - 2 tsp
Ghee - 1 tsp
Salt to taste

Method:

# In a pressure pan add ghee and oil together, once heated add cinnamon, clove, bay leaf, jeera and saute well.

# Add chopped ginger and onion mix well.

# Add chopped Jackfruit Seeds, carrots, green chillis, garam masala, salt and mix well.




# Add basmati or raw rice, add 2 cups of water, kasuri methi / corriander leaves, and pressure cook for 2 whistles. Switch off the stove.


# Once pressure is released, open and leave it for 5-10 min.
Serve with curd, pappads etc.

Tomato pulav

Tomato Pulav
 Simple and easy pulav recipe with tomatoes. Perfect lunch box special!


Ingredients :

Raw Rice - 1 cup
Onion - 1 big
Tomatoes - 3- nos
Bay leaf - 1 no
Clove - 1 or 2 nos
Cinnamon - 1/2 inch
Ginger - small bit
Jeera / Cumin seeds - 1/2 tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Method :

# Heat a pressure cooker, add ghee / oil... Once oil is heated add bay leaves, cumin, clove, cinnamon,  onions....fry until onion changes to pinkish in colour.

# Make a puree with tomatoes and ginger. 


# Add tomato puree, chilli powder, turmeric powder, salt. 
# Saute well.


# Add rice, with 2 cups of water. ( ratio 1:2)


# After 2 whistles switch of the stove.
Finally garnish with chopped coriander leaves.
