Methi Mathri ( Airfried Recipe)

Methi Mathri
Methi Mathri is one of the popular snack recipe of North India. 

This recipe can be made with whole wheat flour / all purpose flour.

Ingredients:
Whole wheat flour / Atta - 200 gms
Semolina / Sooji - 1 tablespoon
Refined oil - 3 tablespoons
Dried Fenugreek leaves / Kasturi Methi - 1tsp
Pepper powder - 1 tsp
Cumin powder - 1 tsp
Ajwain / Carom seeds - 1/2 tsp
Salt to taste
Method:
# Mix all dry ingredients together.
# Heat 2 tablespoon of oil and pour it in the mixture.
# Mix well, you will get bread crumbs consistently.... sprinkle little water and prepare a stiff dough.
# Roll it, use fork to give impression...so that it doesn't puff up.
# Use a cutter to cut the mathri.
# Preheat your Airfrier @ 180'c for 5 min.
# Place your mathri in Airfrier and fry @ 180'c for 10-12 min. Inbetween brush oil.
Methi Mathri's are ready to serve.

Methi Panner Paratha

Methi Panner Paratha!
A very easy and super soft Paratha for breakfast...which can be served with tomato sauce, curd, raita, chutney...


Ingredients:
Methi / Fenugreek leaves - 1/2 bunch
Paneer / Cottage Cheese - 150 grms
Chopped onions - 1 medium size
Whole wheat flour - 2 cups
Red chilli powder - 1 tsp
Cumin / Jeera powder - 1/2 tsp
Garam masala - 1/2 tsp
Turmeric powder - 1/2 tsp
Oil - as required
Salt to taste
Water to kneed the dough..
Method:
# Mix salt with whole wheat flour and prepare a dough for chapati or paratha.

# Heat a pan add little oil, add chopped onions and saute.


# Add washed and roughly chopped methi or fenugreek leaves.


# Add red chilli powder, turmeric powder, salt, garam masala, jeera powder and mix well.

# Add panner and saute well, till it becomes dry...

# Make small balls of wheat flour dough.
# Roll into small roti or chappathi.

# Place the filling in....one rolled roti.. and cover it with another roti.. press the sides well and again roll it to make the Paratha.



# Heat your tava or non-stick pan and place your Paratha..


# Cook well on a medium flame.... add oil or butter.
Serve with ketup / curd / chutney...

Methi Pulav

Methi is rich in iron and minerals, but because of its slight bitterness many of us don't prefer much, specially kids.
     This recipe is an excellent lunch box special and I hope everyone would love it.

Ingredients :
Methi / Ventheyakeerai - 1 bunch
Rice - 1 1/2 cups
Onion chopped - 1 big
Peanuts - 1/2 cup
Ghee - 1 teaspoon
Oil - 2 or 3 teaspoons
Cardamon - 2 nos
Clove - 2 nos
Cinnamon - 1 stick
Sauf - 1 teaspoon
Red chili powder - 1 teaspoon
Turmeric powder - 1 teaspoon
Salt to taste
Water as required
Method :
* Heat pressure pan, add oil and ghee.
* Add sauf, cinnamon, clove, cardamon, peanuts then add chopped onions, saute well, add methi leaves, chilli powder, turmeric powder, salt mix well.
*  Add rice and water, stir well... pressure cook for 2 or 3 whistles.
*  Once pressure settles down... open and mix well.
Serve with curd or any raita of your choice.
