Orange Peel Pachadi

Orange Pachadi is a South Indian special recipe with sweet, tangy and slightly bitter in taste. This is prepared with orange peel. 
For this pachadi we need to remove the white covering from the orange peel as it gives a bitter taste. Wash and chop the orange peel.

Ingredients:
Orange peel chopped - 1 cup
Tamarind juice - 1 cup (thick juice)
Jaggery - 1/2 cup
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Mustard - 1/2 tsp
Methi / Fenugreek seeds - 1/4 tsp
Channa dal - 1 tsp
Asafatedia - 1/2 tsp
Red chillies - 2 nos
Oil - 1 tsp
Salt - according to your taste

Method:
# Pressure cook orange peel for 2 whistles.

# In a pan add oil...once heated add mustard, fenugreek, red chillies, channa dal. Let it spluter well.


# Add cooked orange peel, turmeric powder, red chilli powder, salt, tamarind juice. Mix and  let it boil well.


# Add jaggery and simmer the stove.

# It will thicken in 10-15 minutes. Add asafatedia and switch off the stove.
Orange Pachadi is ready to serve. You can store in refrigerator for more than one month.

Brownies (whole wheat flour & eggless)

Brownies
These brownies are chewy, fudgy, chocolatee... An eggless version with whole wheat flour and brown sugar.


Ingredients:
Whole wheat flour - 1 cup
Powdered Brown sugar - 1 cup
Chopped chocolate - 1 cup
Butter - 1/2 cup
Curd - 1/4 cup
Milk - 1/2 cup 
Baking powder -1 tsp
Baking soda - 1/2 tsp
Cocoa powder -1/4 cup
Vanilla essence - few drops
Chopped walnuts - few

Method:
# Sieve whole wheat flour, baking powder, baking soda, cocoa powder for 4-5 times. ( dry ingredients )
# Melt chocolate, butter (double boiler method) add powdered brown sugar and mix well. Let the mixture rest for few minutes...then add vanilla essence, curd milk and mix well. (wet ingredients)

# Mix wet and dry ingredients together in small batches. Batter will be very thick.

# Grease the baking tin with butter or oil and dust some flour.
# pour the mixture in baking tin add chopped walnuts and some chopped chocolate.

# Preheat your microwave convection oven @ 160'c.
# Bake at same temperature for 25- 30 min.
# Check with a knife it should be slightly sticky.

# Let it cool on wire rack... slice your brownies.

* Before slicing your brownies you can keep it in refrigerator for 1 hr then slice.
* Pressure cooker - Place some salt preheat for 15 minutes... place a ring mould then keep your baking tin. Close cooker without gasket & whistle.
Bake on a medium flame for 45-50 minutes.

Ragi Roti (gluten-free)

Ragi Roti
Simple, healthy, super soft, gluten-free rotis which is easy to make for breakfast... can be served with raita, gravy, kootu or even with any chutney.

Ingredients:
Ragi flour - 1 cup
Water        - 1 cup
Oil              - few drops
Salt to taste.

Method:
# Boil water add 2 drops of oil, salt and ragi flour and stir well on low flame.


# In 3-4 minutes it will come together. Switch off the stove and cover it well. (allow it to cool)

# After 20 minutes apply some oil in your palm and start kneading. In few minutes it will become soft dough. Make marble size balls.

# Heat tawa... coat ragi balls with ragi flour and start rolling. You can roll a thin chapati. (as we do for our normal wheat flour chapati)



# Once tawa is hot add the chapati...in few seconds you can flip and cook the other side.




Once cooked add some oil and make ragi roti. 

You can also make like pulkas. It will puff up well. Apply some ghee to pulkas. These ragi rotis are super soft even you can pack for lunch box.

Orange Cake ( Whole wheat flour)
Orange Cake is simple and easy to bake...which is super soft, moist, citric and aromatic in taste.


Before we move on to the recipe we need to follow few steps:
* Sieve the flour with baking powder and baking soda for atleast 4-5 times.
* Always keep your ingredients in room temperature.
* Preheat your oven/ pressure cooker/ Airfrier/ microwave/ kadai.
* When you add nuts/ tuty-fruity/ raisins/ berries...dust some flour and mix with cake batter. So that your nuts won't sink.

Ingredients:
Whole wheat flour - 1cup
Powered brown sugar - 3/4 cup
Baking powder - 1 tsp
Baking soda - 1/2tsp
Oil - 1/4 cup
Orange juice - 1/2 cup
Curd -1/4 cup
Orange zest - 1 tsp
Dried Cranberries - few

Method:
# Sieve whole wheat flour, baking powder and baking soda together. ( dry ingredients)
# Mix oil and powdered brown sugar. Add orange zest, orange juice & curd. ( wet ingredients)
# Grease your baking tin with oil / butter. Dust some flour in baking tin.
# Preheat your microwave convection oven @160'c.
# Mix dry ingredients with wet ingredients in small batches. Add cranberries and mix well. cake batter is ready. (consistency should be thick like idli batter)
# Pour the cake batter in baking tin.
# Bake @ 160'c for 35-40 min.
# Check by inserting a knife or toothpick in the centre. Give a resting time for 10-15 minutes.
# Unmould you baking tin and allow it to cool on a wire rack. Once it comes to room temperature cut and serve.

* You can bake this in pressure cooker by adding salt in the bottom...place a ring mould then place the baking tin and bake on medium flame for 45-50 min. (without gasket & without whistle)
* Airfrier - Bake @ 170'c for 20-25 minutes.
* Kadai - add salt, place the ring mould, keep your baking tin bake...cover with lid @ medium flame for 45-50 minutes.

Beetroot Kofta

Beetroot Kofta (Airfried Version)
Kofta is a deep fried recipe... which is served with rice or Indian bread. Today I am sharing a Non-fried kofta which is prepared with beetroot.
Ingredients:
Boiled beetroot - 2 medium size
Boiled Potato                - 1 medium size
Onion                  - 2 medium size
Tomato               - 3 medium size
Gram flour          - 2 tsp
Bread crumbs    - 1/4 cup
Khoa                    - 2tablespoons
Jeera                   - 2 tsp
Ginger                 - 1 inch
Turmeric powder- 1/4 tsp
Red chilli powder - 1/2 tsp
Garam masala powder - 1 tsp
Dhania / corridor powder - 1 tsp
Oil                                    - 1 tablespoon
Salt to taste
Coriander leaves to garnish
Salt to taste
Method:
# Pressure cook beetroot and potato.
# Mash boiled beetroot and potato together. Add gram flour / besan, turmeric powder, red chilli powder, garam masala, salt, dhania / cumin powder and mix well...add some bread crumbs and make balls.



# Coat the balls with bread crumbs.


# Preheat Airfrier @ 200'c for 5-7  minutes.
# Fry the kofta in Airfrier @ 200'c for 20 minutes. Inbetween check.


# Chop onion and tomatoes, ginger and saute in little oil. ( make a fine paste)
# For gravy heat a pan add oil, add jeera / cumin, onion tomato paste with salt, red chilli powder, garam masala, turmeric, dhania powder and saute well. Add khoa / Mawa with little water...let it boil well. Once it comes to gravy consistency add coriander leaves and switch off your stove.

# Add Airfried Kofta with gravy... garnish with chopped coriander leaves and serve.
* You can add the dry masalas according to your taste.

Rice Cutlet

Rice Cutlet
Rice Cutlets are easy and simple to make for evening snacks. Mix rice, pasta add some seasoning, coat with bread crumbs and fry them. I always use my Airfrier to fry cutlets... but you can shallow fry or deep fry these cutlets.

This is one of my hit recipe during tea-time....you can use any type of pasta with red sauce or white sauce... today I am using elbow pasta with white sauce.


You can use fresh cooked rice and pasta while preparing this recipe.

Ingredients:
Leftover rice - 1 cup
Leftover Pasta - 1 cup
Bread crumbs - 1/2 cup
Chilli flakes - 1 tsp
Oregano seasoning - 1 tsp
Oil - 2 tsp
Salt to taste.

Method:
# In a mixing bowl add leftover rice, pasta, chilli flakes, oregano seasoning and mix well.

# Shape the cutlets and coat with bread crumbs.

# Preheat Airfrier @ 180'c for 5 minutes.

# Place the Cutlets in Airfrier and fry @200'c for 20 minutes. Inbetween we need to brush oil.
# Once cutlets are done serve with ketchup or chutney.
