Eggless Savoury Muffins - Airfrier Recipe!!
We gendrally love to eat Muffins, but I tried this Savoury Muffins, stuffed with Cottage Cheese and Spinach.... Which came out really well. I would love to share this recipe, as you can serve this as a party special!!!




Ingredients:
All purpose flour - 1 cup
Baking soda - 1/ tsp
Baking powder - 1/2 tsp
Butter - 50 grms
Condensed milk - 2 tablespoon
For filling:
Spinach - 1/2 cup
Cottage cheese - 1/2 cup
Cumin seeds powder - 1/2 tsp
Pepper powder - 1/2 tsp
Kasuri methi /
Mixed herbs -  1/2 tsp
Salt to taste
Method:
# Seive the flour, add baking soda, baking powder.
# Mix Condensed milk and butter well.
# Add wet ingredients with dry ingredients, add little salt and pepper powder.
# For filling heat pan add oil add spinach, salt, Cumin powder, pepper powder and mix, then add kasuri methi.
# Preheat the Airfrier @ 180'c for 5 min.
# Pour the mixture in mould 1/2 and then fill the filling, then again pour the mixture and bake it at 180'c for 15-20 min.

Cauliflower Casserole - Christmas Special Recipe!!!
A delicious cheesy baked dish. Today I'm sharing an Airfried version of Cauliflower Casserole.



Ingredients:
Cauliflower - few florets
Onion - 1 small
White sauce - 1 cup
Cheese - 2 sheets / 1/2 cup grated
Butter - 1 tablespoon
Pepper powder - 1/2 tsp
Kasuri methi / Mixed Herbs - 1/2 tsp
Powder biscuits / bread crumbs - 1 cup
Method:
# Grease the baking tin.
# Add chopped onions, add cauliflower florets, white sauce, butter.

# Sprinkle pepper powder, kasuri methi, cheese sheets, and at last bread crumbs or powdered biscuits.
#Preheat Airfrier @ 200'c for 5 min.
# Bake @ 200'c for 15 - 20 min or till nice crust at the top comes.

Eggless Orange Chocolate Cake - Christmas Special ( Airfryer Recipe)

Eggless Orange Chocolate Cake - A Christmas Special Cake  with a simple chocolate ganache.




Ingredients:
All purpose flour - 100 grms
Butter - 50 grms
Condensed milk - 1/2 cup
Orange juice - 1 cup
Orange zest - 1tsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Cocoa powder - 1 tablespoon

Ingredients for Chocolate ganache:
Butter - 25 grms
Powdered sugar - 2 tablespoons
Milk powder - 2 tablespoons
Cocoa powder - 2 tablespoons
Milk - 2-3 tsp.


Method :
# Sieve all dry ingredients, all purpose flour, baking powder, baking soda, cocoa powder.(dry ingredients)
# Melt butter, add condensed milk and mix well.
# Add orange zest and orange juice to condensed milk and butter mixture. (wet ingredients)
# Now add dry ingredients with wet ingredients.... gently fold your cake batter.
# Preheat Airfrier @ 180'c for 5 min.
# Grease cake tin with butter and sprinkle some all purpose flour.
# Bake @ 180'c for 20 - 25 min.
# Let the cake rest for 1 hr.
# Cut the cake in two halves. Cut the top portion of the cake to level it.
# For ganache, melt butter add powdered sugar, milk powder, cocoa powder and mix well. If needed add some more milk.
You can prepare this cake in microwave convection mode:
Preheat @ 160'c. Bake @ 160'c for 35-40 min. 
If you are baking in pressure cooker:
Add salt and spread it well... preheat your cooker for 15 min on medium flame.
Bake you cake on medium flame for 40-45 min. Without gasket, without whistle.

Spread the chocolate ganache in the cake,  keep the bottom layer at the top and spread ganache. Sprinkle some cherries and serve.

Pop Rice Sweet Balls - Aval Pori and Nel Pori Urundai

 Karthigai Deepam Special - Aval Pori and Nel Pori Urundai.
Pori Urundai is a traditional recipe made for Karthikai Deepam. These are healthy to consume during tea time. While preparing Pori Urundai, strain your jaggery syrup, which is very important. For crispyness of Urundai you should open the Pori from the pack just before you add to the jaggery syrup.


Ingredients:
Popped Beaten rice flakes /
Popped Paddy flakes             - 4 cups
Jaggery                                     - 1 1/2 cups
Coconut cut into  bits              -  1/4 cup
Dry Ginger powder                    - 1/2 tsp
Cardoman powder                    - 1/2 tsp
Method:
# Heat a pan add jaggery syrup and let it boil well. To check consistency of the jaggery syrup, pour the syrup in water and roll it with your fingers, it should turn into ball shape.
# Add cardoman powder, dry ginger powder, bits of coconut pieces, and mix well.
# In a tray clean the popped Beaten Rice flakes, & winnow the husk.
# Add fried Chana and pour the Jaggery syrup and mix well.
# Apply rice flour in your palms before preparing the Sweet balls.
# When you roll the ball for the first time, don't worry about the shape ... roll it for the second time & the sweet ball will get the round shape and also it will firmly hold together.
Store these Pori Urundais in air tight container to maintain the crispness.

Methi Paratha - Winter Special Recipe


Ingredients:
Methi / Fenugreek leaves - 1 cup
Whole wheat flour - 150 grms
Jeera / Cumin seeds powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Oil to prepare Paratha
Salt to taste
Method:
# Wash fenugreek / methi leaves and roughly chop.
# Mix whole wheat flour, fenugreek leaves, cumin powder, salt, red chilli powder. Sprinkle water little by little and knead the dough. Add few drops of oil and knead the dough.
# Heat the pan or tawa and roll the parathas.
# Cook well and serve with raita or sabji.
