Tutti Frutti Bread

Tutti Frutti Bread is sweet and soft bread perfect for breakfast. A healthy version with whole wheat flour and honey. Today I have added some homemade tutti frutti you can even add raisins or cranberries.

Ingredients:
Whole wheat flour - 1.5 cups / 180 gms + 2 tablespoons
Honey - 2 tablespoons
Full fat milk - 1/4 cup / 60 ml
Instant active dry yeast - 1/2 tsp
Refined oil - 1 tablespoon
Butter - 1 tsp
Tutti Frutti - 1.5 tablespoon
Salt - 1/4 tsp
Water - 3/4 cup

Method:
# In a bowl add whole wheat flour, yeast, milk, honey, salt mix well. Add 1/4 cup of water and start kneading. Add water as required... initially it will be sticky. Knead the dough for 5 minutes. Apply oil and cover the dough with cling wrap. Let it proof for 40-45 minutes. 


# Once the dough doubles in size. Dust some whole wheat flour on working surface and punch the dough... stretch and pull for 8-10 minutes. Apply some oil, use  pull and stretch method. After 10 minutes the dough with become soft... roll it in rectangular add some tutti Frutti fold it to log shape. Pinch the ends well.



# Grease your baking tin with oil. Place your bread log in tin. (baking tin size 7×3) cover it leave it for 2nd proofing for 20-25 minutes.

# Preheat your microwave convection mode @ 180'c. 
# Once it proofs well brush with milk and bake @ 180'c for 30 minutes.

# Once bread is baked brush some butter and cover it with wet cloth for 15 minutes. 

# Loosen the sides of baking tin. Demould the bread and allow it to cool on a wire rack.

Slice your bread after 2-3 hrs.

Bread Upma

Bread Upma
Bread Upma is a simple, quick, easy colourful breakfast recipe which takes just 5-7 minutes.

Today I'm using homemade semolina bread.
Homemade Semolina Bread. Below link is from my own blog:

Ingredients:
Bread slices - 7-8 nos
Grated carrots - 2 tablespoons
Chopped onion - 1 medium size
Peanuts - 2 tsp
Chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Mustard / Rai - 1 tsp
Salt - 1/2 tsp
Refined oil - 1 tablespoon
Chopped coriander for garnish

Method:
# Cut bread slices in squares.

# Heat a pan add oil, peanuts slightly fry them add mustard let it crackle well, put chopped onion fry until it becomes transparent add grated carrots, salt, turmeric, chilli powder sprinkle water mix well and close the pan for 2 minutes.

# Mix well add bread pieces and stir well. On low flame let it be for 2 minutes. Add chopped coriander leaves mix well and serve.

Bread Khaja

Bread Khaja
Bread Khaja is a perfect dessert / sweet dish served for get-together/ parties. In 10-15 minutes you can prepare a quick, easy, non-fried /zero oil/ zero butter sweet dish.

Steps and ingredients:
Bread slices - 5-6 nos
Sugar - 1/4 cup
Water - 1/4 cup
Cardamom powder - 1/2 tsp
Chopped almonds and pistachios - 1 tsp

Method:
# Trim the edges of bread slices and give a rectangular shape.(any shape which you like)

# Fry bread pieces in Airfrier @ 180'c for 15 minutes.


# Make sugar syrup by adding sugar and water.
Boil well no need of string consistency. (just sticky consistency) Add cardamom powder switch off the stove.


# Once bread slices are fried golden colour, dip them in sugar syrup for 30 seconds.

# Remove on a serving plate garnish with chopped almonds and pistachios. 

* For me it took 15 minutes to fry bread pieces. It might take slightly longer time ( 3-5 minutes) extra... depends upon your Airfrier.

Semolina Bread

Semolina Bread
Joy of baking is when your bread turns out super soft, golden brown on the top. For this bread no kneading is required.

Ingredients:
Semolina - 300 gems
Jaggery syrup - 2 tsp
Instant active dry yeast- 1/2 tsp
Milk & water - 1/4 milk+1/4 water
Curd - 1 tablespoon
Salt - 1/2 tsp
Oil - 1 tsp
Butter - 1 tsp

Method:
# In a bowl add semolina, jaggery syrup, salt, yeast, curd milk and water mix well.



# Rest for 25 minutes for first proofing.

# Take it on a work surface add oil, sprinkle water or wet your hands and stretch the dough for 5 minutes.

# Grease the baking tin with oil / butter. My baking tin size is 7×3. 
# Pour the mixture in baking tin, allow it for 2nd proofing till it reaches the pan.

# Preheat your microwave convection mode @ 190'c.

# Bake at 190'c for 25 minutes.

# Remove the bread tin from microwave convention oven apply butter. Again bake @ 200'c for 10 minutes.

# Once done apply butter allow it to cool.
# After 20 minutes loosen the edges of baking tin and allow the bread to cool on wire rack.


# After 3-4 hrs use serrated knife to slice your bread.

Hello Everyone!
Homemade Pav buns are soft, tasty, healthy when prepared with 100% whole wheat flour. Today I am sharing a healthy version of whole wheat pav buns with zero sugar. These buns can be stored in refrigerator for couple of days and in freezer for about 7-8 days. You need to cling wrap the buns before putting  into the freezer.

Ingredients:
Whole wheat flour - 2 cups
Instant active dry yeast - 1/2 tsp
Jaggery syrup - 2 tsp
Milk - 1/4 cup 
Butter - 2 tsp
Oil - 1 tablespoon
Salt - 1/2 tsp
Water - 1/2 cup / as required to knead
* Butter and milk we need to brush the pav buns
1.5 tsp each.(extra)

Method:
# In a bowl mix whole wheat flour, jaggery syrup, yeast, salt and mix well.

# Warm the milk add butter.

# Make a well in the flour...pour the milk, butter mixture. Start mixing... sprinkle water and start kneading. It will be slightly sticky but after kneading for 8-10 minutes it will be a soft dough. As this is a whole wheat flour you may require little extra water while kneading.


# Keep th dough in well greased bowl and apply some more oil to the dough. Cover well and allow the dough to proof. (until it double in size)

# Grease the baking tin with oil or butter.
# For me it took 45-50 minutes to proof. Punch the dough and again knead for 1 minute.


# Make tight balls of the dough and arrange in the baking tin. Leave some space while you arrange pav buns as they need space to expand. Cover and again keep it for 2nd proofing for 20 minutes.


# Preheat your microwave convection mode @ 180'c.
# After 20 minutes check the pav buns...it will double in size... apply milk wash.


# Bake pav buns @ 180'c for 25 minutes.

Once done you can see a golden crust on top of the buns. Apply butter and cover the buns with wet cloth. After 1/2 hr demould the buns and allow them to cool.
