Corn Pulao

Corn Pulao 
Corn Pulao is a delicious, mild flavoured, less spicy Pulao which is very easy to make at home. You can use sweet corn / Desi corn to prepare this dish. Today I used normal raw rice, you may try with basmati rice which gives nice taste and aroma to this Pulao.
Ingredients:
Sweet Corn - 1/2 cup
Capsicum- 1/4 cup
Raw rice- 1 cup
Clove - 2 nos
Cinamon- 1 inch
Star Anise- 1 no
Cardamon- 2 nos
Raisins- 4-5nos
Oil / ghee - 1.5 tablespoons 
Jeera / cumin - 1 tsp
Onion - 1 finely chopped 
Green chilli  - 2 nos
Salt to taste 
Method:
# Wash  rice and soak for 10 minutes.
# In a pressure cooker  add oil / ghee, add all the whole spices, cumin/ jeera and saute well.
# Add the chopped onions, green chilli's, corn, capsicum and saute well.
# Add salt, washed rice, 2 cups of water and cook the Pulao for 2 whisles.
# Allow the pressure to release.
Corn Pulao is ready to serve.

Vegetable Pulao

Vegetable Pulao

Vegetable Pulao is a simple recipe with mild spices. This can be served for lunch / dinner...with raita / papad.

Ingredients:
Vegetables - 1 cup ( carrot, beans, capsicum)

Basmati rice - 1.5 cups
Bay leaves - 2 nos
Star anise - 1 or 2
Coves - 3-4 nos
Cinnamon - 1 inch 
Green cardamom - 2 nos
Jeera / Cumin seeds  - 1.5 tsp

Ghee / Oil - 1 tablespoon
Salt - 1.5 tsp ( to taste)
Method:
# Wash basmati rice and soak it in water for 15-20 minutes.

# In a pressure cooker add oil / ghee....once heated well add bay leaves, star anise, cinnamon, clove, cardamom, jeera.

# Add vegetables and saute well.

# Add soaked basmati rice, salt to taste and 3 cups of water.



# After 2 whistles switch off the stove.
Once pressure is released...open your pressure cooker and don't stir when it is hot....ive

a resting time for 10 minutes then give a stir and serve with raita / papad.


* Ratio 1: 2  or 1:2.5 ( basmati rice : water)

Peas Pulao / Matar Pulao

Peas Pulao / Matar Pulao
Green Peas Pulao/Matar Pulao is one of the authentic recipe of North India, which is served as main course with raita or papads or with any side dish. This is a simple and easy recipe, which can be served for lunch, get-together, parties, dinner or for lunch box. 

Ingredients:
Green peas - 100 grms / 1 cup ( soaked overnight)
Basmati Rice - 1.5 cups
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Cumin / Jeera powder - 1 tsp
Chopped onion - 2 nos
Green chillis - 3-4 nos
Tomato - 1 medium size
Coriander leaves - handful
Ginger - 1 inch
Cumin seeds - 1 tsp
Bay leaf - 2 nos
Clove - 2-3 nos
Cinnamon - 1 inch
Cardoman powder / Cardoman - 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Method:
# Wash rice and keep aside.

# In a mixie....grind tomato, ginger, green chillis, coriander leaves to a smooth paste.


# In a pressure cooker....add oil once heated add bay leaf, cumin seeds, cloves, cinnamon and onions and saute well.







# Add soaked peas / matar, grinded paste, salt, turmeric powder, cumin powder, cardoman powder, corriander powder and saute well.



# Add washed basmati rice, add water accordingly. (For 1 cup rice - 1.5 cups - 2 cups....no need to add extra water for green peas)


# Pressure Cook for 2 whistle and switch off the stove.
# Once pressure is released....give a resting time for 10-15 minutes then mix well....serve with raita or papads.
