Proso Millet Pulav / Panivaragu Pulav

Proso Millet Pulav / Pani varagu Pulav 
Good Afternoon!
Proso Millet/ Panivaragu Pulav is high in nutrition and low in calories. A simple, easy and healthy recipe perfect for a main course. 
Ingredients:
Proso Millet- 1 cup
Bay leaf- 1 number 
Black Cardamom- 1 number 
Cloves - 2 nos
Cinnamon stick - 1/2 inch 
Cumin / jeera - 1/2 tsp
Oil / ghee - 1 tsp
Chopped onion - 1 number
Carrots - few pieces
Capsicum- few pieces
Salt - to taste 
Corriader leaves for garnish 
Method;
# Wash and soak Proso Millet for 3-4 hrs.
# In a pan add oil, add cumin let it splutter well, add bay leaf, cardamom, clove, cinnamon, chopped onions and fry, add chopped vegetables, salt and saute well.
# Add the soaked Proso Millet to the tempered vegetables and whole spices. 
# Add 1 cup of water, salt to taste and cook on medium flame. Once cooked well add chopped coriander leaves and serve.
Notes: I generally remove the soaked water and add fresh water to cook Millets. If you use the same soaked water do not add extra water while cooking Millet Pulav.

Pachai Mochai Pulav ( Avarakalu Pulav)

Pachai Mochai/ Avarakalu Pulav
Pachai Mochai is nothing but Indian Field Beans, which we get in abundance during October - January. We can prepare number of recipe's using pachai mochai such as pulav, upma, sambar, masala gravy, uppittu, etc.
Today I am sharing Pachai Mochai Pulav, which you can prepare as a lunch box special.

Ingredients:
Pachai Mochai / Avarakalu - 1 cup
Basmati rice - 1 cup
Green chillies - 2 nos
Onion - 1 medium size
Ginger - 1/2 inch finely chopped
Mint / Pudina leaves - 7-8 nos
Oil / ghee - 1 tablespoon
Turmeric powder - 1/2 tsp
Coriander Powder - 1 tsp
Clove - 1 or 2 nos
Cinnamon stick - 1/2 inch
Bay leaves - 1or 2 nos
Salt to taste

Method:
# Heat a pressure cooker, add oil or ghee, add clove, cinnamon, bay leaves, chopped ginger, green chillies and saute well.

# Add chopped onion's, and saute until it becomes transparent, add turmeric powder, coriander powder, mint leaves, salt to taste and mix well.

# Add pachai mochai or avarakalu, washed basmati rice, water ( 1:1.5) rice :water.

# Pressure cook for 2 whizles and switch off the stove.

# Allow the pressure to release then open.
# You can give a resting time for 10-15 min then mix well and serve.

Peas Pulao / Matar Pulao

Peas Pulao / Matar Pulao
Green Peas Pulao/Matar Pulao is one of the authentic recipe of North India, which is served as main course with raita or papads or with any side dish. This is a simple and easy recipe, which can be served for lunch, get-together, parties, dinner or for lunch box. 

Ingredients:
Green peas - 100 grms / 1 cup ( soaked overnight)
Basmati Rice - 1.5 cups
Turmeric powder - 1/2 tsp
Coriander powder - 1 tsp
Cumin / Jeera powder - 1 tsp
Chopped onion - 2 nos
Green chillis - 3-4 nos
Tomato - 1 medium size
Coriander leaves - handful
Ginger - 1 inch
Cumin seeds - 1 tsp
Bay leaf - 2 nos
Clove - 2-3 nos
Cinnamon - 1 inch
Cardoman powder / Cardoman - 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Method:
# Wash rice and keep aside.

# In a mixie....grind tomato, ginger, green chillis, coriander leaves to a smooth paste.


# In a pressure cooker....add oil once heated add bay leaf, cumin seeds, cloves, cinnamon and onions and saute well.







# Add soaked peas / matar, grinded paste, salt, turmeric powder, cumin powder, cardoman powder, corriander powder and saute well.



# Add washed basmati rice, add water accordingly. (For 1 cup rice - 1.5 cups - 2 cups....no need to add extra water for green peas)


# Pressure Cook for 2 whistle and switch off the stove.
# Once pressure is released....give a resting time for 10-15 minutes then mix well....serve with raita or papads.

Jackfruit Seeds Pulav
Jackfruit Seeds provide good amount of dietary fibre, provides antioxidant and has many health benefits....not only fruit is used in cooking but we South Indian's even use its seeds and leaves. The seeds are dried and the skin is removed...and we  prepare recipes like....curry, sabzi, variety rice, pulav, masala bhat etc..

You can serve this recipe with raita, plain curd, dhal, any gravy, sabzi, roasted papads, waffers etc..

We need to remove the outer skin of jackfruit seed, once it is dry he(the white colour skin)

Ingredients:


Jackfruit Seeds - 10-12 nos
Basmati rice / Raw Rice - 1 cup
Onion - 1 medium
Carrots - 1 medium
Green chillis - 1 slit
Ginger - 1 inch finely chopped
Bay leaf - 1-2 nos
Cinnamon - 1 inch
Clove - 1-2 nos
Jeera - 1 tsp
Garam masala - 1/2 tsp
Kasuri Methi / coriander leaves - 1 tsp
Oil - 2 tsp
Ghee - 1 tsp
Salt to taste

Method:

# In a pressure pan add ghee and oil together, once heated add cinnamon, clove, bay leaf, jeera and saute well.

# Add chopped ginger and onion mix well.

# Add chopped Jackfruit Seeds, carrots, green chillis, garam masala, salt and mix well.




# Add basmati or raw rice, add 2 cups of water, kasuri methi / corriander leaves, and pressure cook for 2 whistles. Switch off the stove.


# Once pressure is released, open and leave it for 5-10 min.
Serve with curd, pappads etc.

Palak Paneer Pulav

Palak Paneer Pulav / Spinach Cottage Cheese Rice
A wonderful Recipe for Lunch Box Special... A very healthy dish, with full of iron, and nutrients. The palak gravy which I am sharing, can be stored in refrigerator for 5- 10 days.
You can prepare many dishes using palak gravy:  such as Palak Paneer, Aloo Palak, Dal Palak, Palak Pooris, Dal kofta Palak etc. A Very easy recipe, not only lunch box, but can be served for kids as Green rice....

Ingredients:
Palak - 1 bunch
Rice - 1/2 cup
Panner - 100 grms
Onion - 1 medium size
Ginger - 1 inch chopped
Bay leaf -2 nos
Cardoman - 2-3
Cinnamon - 2 inch
Clove 2-3
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1/2 tsp
Ghee - 1 tsp
Oil - 2-3 tsp
Salt to taste
Method:
# Boil water( 1/2 cup of rice - 1-2 cups of water) add bayleaf, cinnamon, clove , rice,  salt and 1 tsp of ghee / butter and cook it for 70 percent or half cooked rice we can call.
# Blanch palak in hot water, strain and make puree with ginger.
# Fry paneer till it changes it's colour.
# In a pan add 2-3 tsp of oil, add chopped onions, when it becomes transparent, add palak puree, salt, red chilli powder, turmeric powder, garam masala mix well.
Until the raw smell of masala's completely goes.
# once rice is half cooked, strain it.
# Add half cooked rice with Palak gravy, fried paneer and close the pan for 2-3 min, in a slow flame.
Palak Paneer Pulav is ready to serve.
Serve with raita, or plain curd.

Methi Pulav

Methi is rich in iron and minerals, but because of its slight bitterness many of us don't prefer much, specially kids.
     This recipe is an excellent lunch box special and I hope everyone would love it.

Ingredients :
Methi / Ventheyakeerai - 1 bunch
Rice - 1 1/2 cups
Onion chopped - 1 big
Peanuts - 1/2 cup
Ghee - 1 teaspoon
Oil - 2 or 3 teaspoons
Cardamon - 2 nos
Clove - 2 nos
Cinnamon - 1 stick
Sauf - 1 teaspoon
Red chili powder - 1 teaspoon
Turmeric powder - 1 teaspoon
Salt to taste
Water as required
Method :
* Heat pressure pan, add oil and ghee.
* Add sauf, cinnamon, clove, cardamon, peanuts then add chopped onions, saute well, add methi leaves, chilli powder, turmeric powder, salt mix well.
*  Add rice and water, stir well... pressure cook for 2 or 3 whistles.
*  Once pressure settles down... open and mix well.
Serve with curd or any raita of your choice.

Tomato pulav

Tomato Pulav
 Simple and easy pulav recipe with tomatoes. Perfect lunch box special!


Ingredients :

Raw Rice - 1 cup
Onion - 1 big
Tomatoes - 3- nos
Bay leaf - 1 no
Clove - 1 or 2 nos
Cinnamon - 1/2 inch
Ginger - small bit
Jeera / Cumin seeds - 1/2 tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Method :

# Heat a pressure cooker, add ghee / oil... Once oil is heated add bay leaves, cumin, clove, cinnamon,  onions....fry until onion changes to pinkish in colour.

# Make a puree with tomatoes and ginger. 


# Add tomato puree, chilli powder, turmeric powder, salt. 
# Saute well.


# Add rice, with 2 cups of water. ( ratio 1:2)


# After 2 whistles switch of the stove.
Finally garnish with chopped coriander leaves.
