Nimki (Airfried)

Nimki is a snacks which is made with wheat flour, salt, ghee/ butter, kalonji/ black onion seeds. All the Ingredients are mixed with  little water to form a dough. Rolled to a flat bread and cut into desired shape and airfried.
Ingredients:
Whole Wheat flour - 1 cup
Butter / ghee - 2 tsp
Kalonji/ black onion seeds - 1/4 tsp
Oil - 1 tablespoon
Water- to knead 
Salt to taste
Method:
# Mix Whole Wheat flour, salt, kalonji, ghee.
# Sprinkle little water to knead a stiff dough.
# Divide the dough to Marble size balls.
# Roll the dough to a flat bread / Chappati with 1/2 inch thickness.
# Cut in desired shape.
# Place the nimkis in airfrier and fry at 180'c for 12 minutes. In between brush some oil.
Once nimkis are fried allow it to cool, store in an airtight container.

Fried Idli (Airfried)

Fried Idli (Airfried)
Happy World Idli Day to all!
Fried Idli's are delicious, crispy snacks served for tea-time. You can deep fry / shallow fry. 
Today I'm sharing an Airfried version of fried Idli.
Ingredients:
Idli - 7-8 nos
Gunpowder / idli pode - 2 tablespoons
Curry leaves for garnish
Oil - 1.5 tsp
Method:
# Cut idli in desired shape.
# Sprinkle idli powder/ gunpowder.
# Drizzle oil and make sure idli podi and oil is coated well.
# Airfry @ 200'c for 15-20 minutes. 
Or until it becomes golden in colour. 
Once done sprinkle curry leaves and serve.

Pasta Cutlets


Pasta Cutlets
Cutlets are crispy from outside and soft from inside. These can be deep fried, shallow/ Airfried. These cutlets are made with leftover pasta, mashed potatoes, capsicum, mixed with spices and Airfried. 
To make pasta you can follow the instructions mentioned in the instant pasta pack.
Ingredients:
Leftover pasta - 1 cup
Mashed potatoes - 2 medium size
Chopped onion- 1/4 cup
Chopped capsicum - 1/4 cup
Red chilli powder - 1/2 tsp
Cumin/ jeera powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt - 1 tsp
Vermicelli - 1/2 cup
Refined oil - 1.5 tsp (brush before Airfry)
Method:
# Mix pasta, mashed potatoes, onion, capsicum, salt, cumin powder, red chilli powder, garam masala.
# Shape the cutlets coat them with vermicelli.
# Refrigerate for 1/2 hr.
# Brush some oil and Airfry at 200'c for 20-25 minutes.
# Paste cutlets are ready to serve.

Suji Rusk

Suji Rusk
 Rusk is a best snacks served for a evening tea-time. It is a twice baked suji/ sooji cake. I'm sharing a healthy version of suji Rusk with jaggery powder.
 
Ingredients:
Sooji / Semolina - 1 cup / 170 hms
Jaggery powder - 1/2 cup / 90 gms
Buttermilk - 1 cup / 250 ml
Oil - 1/4 cup / 60 ml
Baking powder - 1 tsp
Baking soda - 1/4 tsp
Cardamom essence - 1/2 tsp
Method:
# Mix semolina, jaggery powder, buttermilk, oil, cardamom essence.
# Leave the above mixture for 30 minutes.
# Preheat microwave convection oven @ 170'c.
# Grease baking tin with oil.
# Add baking powder and baking soda to the cake mixture. (Mix well)
# Pour the batter into greased tin and bake @ 170'c for 30 minutes.
# Check by inserting a knife. Once the cake is baked well allow it to cool.
# Demold the cake after 10 minutes.
# Allow it cool completely. You can refrigerate for 1 hr before you slice your cake.
Notes:
* No need to preheat while baking the Rusk / placing the cake slices while baking.
# Place the cake slices in a greased baking tin and bake @150'c for 10 minutes. Or until it changes its colour to light brown.
# Flip the Rusk so that the other side gets baked well @ same temperature for 10 minutes.
# Allow it to cool completely on wire rack.
Serve with tea/ coffee.

Verki Puri (Airfried)

Verki Puri
Verki Puri is a crispy, flaky, savoury snacks which are perfect to be served for tea-time. I've used whole wheat flour and fried these in Airfrier. These can be deep fried in medium hot oil.

Ingredients:
Whole wheat flour - 200 gms + 4 tablespoons
Semolina / Sooji - 2 tablespoons
Refined oil - 3 tablespoons
Onion seeds / Kalonji - 1 tsp
Crushed pepper - 1 tsp
Cumin / Jeera - 1 tsp
Salt to taste
Method:
# Mix whole wheat flour, semolina, crushed pepper, cumin, onion seeds, salt.
# Heat 2 tablespoons of oil.
# Pour hot oil in flour mixture. Leave it for few minutes.
# Mix well until you get a bread crumbs consistency.
# Sprinkle water and knead a dough. Not too stiff nor too soft.
# Apply 1tsp of oil and cover the dough for 15-20 minutes.
# After 15 minutes knead for 1 more minute. Make small marble size balls. Roll to a thin flat bread / chapati.
# Brush some oil and sprinkle some wheat flour and place the 2nd chappati. Repeat this... I've used 7 chapatis. Give a log shape. Pinch the edges well.
# Cut the log with 1inch gap.
# Press and roll slightly. As shown in the picture.
# Preheat Airfrier @ 180'c for 5 minutes.
# Place the Verki Puri's in Airfrier...3-4 pieces at a time... Do not overload them.
# Airfry @ 180'c for 15 minutes. Inbetween brush some oil and flip verki puris.
# Once verki puris are fried allow them to cool.
Store in an airtight container.

Custard Cookies

Custard Cookies
Custard Cookies are delicious, melt in your mouth with vanilla custard flavour. These are perfect tea-time snacks. For these cookies I have used whole wheat flour and custard powder.
* Before you start baking sieve whole wheat flour, custard powder, baking soda, baking powder for 5-6 times. 
* Always preheat your oven / microwave convection mode / pressure cooker before baking. 
* Grease your baking tin / pan with butter or oil.

Ingredients:
Whole wheat flour - 1 cup / 120 gms
Custard powder - 1/4 cup 
Brown sugar - 1/2 cup / 90 gms
Unsalted butter - 1/2 cup 
Baking powder - 3/4 tsp
Baking powder - 1/4 tsp
Milk - 2 tablespoons
Vanilla essence - few drops

Method:
# Cream butter and brown sugar together.
# Mix your sieved flour with creamed butter.
# Mix with light hand and make a dough. Add milk / sprinkle milk to form a dough. 
# Make marble size balls and use fork to give impression.
# Preheat your microwave convection mode @ 180'c.
# Grease your baking tin with oil / butter. Arrange the custard cookies.

# Bake @ 180'c for 10 minutes.
# Once baked cool on a wire rack and store them.

Jeera Biscuits

Jeera Biscuits
Jeera Biscuits are perfect for afternoon tea-time. These are mild sweet and savoury biscuits with cumin/ jeera flavour. 
Ingredients:
Whole wheat flour - 1 cup ( 120 grams)
Jaggery syrup - 2 tablespoons
Butter - 1/2 cup 
Baking powder - 1 tsp
Salt - 1 tsp
Jeera - 1.5 tsp

Method:
# Dry roast and crush jeera / cumin.
# Sieve whole wheat flour, baking powder, salt for 5-6 times.
# Mix butter, jaggery syrup, sieved flour, crushed cumin/ jeera to make a dough.
# Roll the dough to a thin chappati / flat bread. Use a cookie cutter to cut / shape your biscuits.
# Grease the baking tin with oil / butter. Arrange the biscuits.
# Preheat your microwave convection mode @160'c.
# Bake @ 160'c for 12 minutes.
Once baked remove on a wire rack and cool completely.
Store in an airtight container.

* Consistency of jaggery syrup is like honey.
* While baking second batch of biscuits reduce the time to 10 minutes.
* You can bake in Airfrier @ 160'c for 10 minutes.
* Kadai - add salt in the base and cover with a lid preheat for 12 minutes on medium flame. Place  a ring mould. Place the biscuits in a plate cover with a lid and bake on medium flame for 15-20 minutes. Keep checking once it changes colour can remove and allow it to cool.
* Baking in pressure cooker and kadai are same. If you bake in pressure cooker remove gasket and whistle.
