Carrot Halwa - Winter Special Recipe
Carrot Halwa is a dessert recipe, which is very popular during winter season.....specially in North India.
It is prepared with red carrots, milk, sugar and fried nuts. This recipe is little time taking as we need to cook grated carrots in milk and wait till the milk gets reduced, then add sugar and again it takes some time to get halwa consistency. Today, I am sharing a simple and quick recipe with milk powder which takes 10-15 minutes to prepare carrot halwa.

Grated carrots - 150 grms
Sugar - 75 - 100 grms
Milk powder - 100 grms / 1 cup
Milk - 2 tablespoons
Cardoman powder - 1 teaspoon
Ghee - 2 tablespoons
Cashew and Raisins few
Sugar - 75 - 100 grms

Method:
# Heat kadai add 1 tsp of ghee and fry milk powder and switch off the stove. ( it should not change colour)
# In another pan add 1 tablespoon of ghee and add grated carrots, close the pan for 2-3 min.
# Once carrots are cooked add sugar and mix well.
# It will become slightly watery but when we add milk powder the consistency will be perfect.
# Add milk powder fried in ghee and mix well.
# After mixing milk powder it will take hardly 2-3 min. In few seconds halwa will leave the sides of the pan, switch off the stove.
# Add ghee in a pan fry cashews and raisins pour it in halwa and add cardoman powde, mix well. It will take hardly 10 - 15 min to prepare carrot halwa.
