Orange Raisin Bread

Orange Raisin Bread
I'm happy to share a healthy, soft, aromatic, whole wheat Orange Raisin Bread which is a vegan recipe. You can add milk and any kind of berries, nuts, tutti-frutti to this recipe.
Ingredients:
Whole wheat flour - 220 gms
Jaggery syrup - 2 tablespoons
Instant active yeast - 1/2 tsp
Salt - 1/4 tsp
Fresh orange juice + water - 3/4 cup 
Orange zest - 1 tsp
Oil - 2 tablespoons
Raisins - 2 tablespoons
Method:
# Mix whole wheat flour, yeast, salt, jaggery syrup, orange zest.
# Add orange juice and water and knead a soft dough. Initially it will be very sticky but after 10 minutes it will be smooth and elastic.
Stretch and pull method should be used while kneading a bread dough. (10-12 minutes)
# Apply oil in a bowl and keep the dough well greased with oil. Cling wrap and allow it to proof.
First proofing (1 hr)
# Once the dough doubles in size. Dust some whole wheat flour on working surface and punch down the excess air.
# Roll to a rectangular shape and sprinkle raisins and give a log shape.
# Pinch the edges of log well.
# Grease your baking tin with oil.
#Place the log in baking tin and cling wrap for 2nd proofing for 20-25 minutes or till it reaches the trim of the pan.
# Preheat oven / microwave convection mode @ 190'c.
# Brush some jaggery syrup before you bake.
# Bake @190'c for 30-35 minutes.
# Once baked brush some oil and leave it for 5-10 minutes. 
# Demould and let it cool on wire rack for 3-4 hrs.
Use cerrated knife to slice your bread.

Karachi Biscuits

Karachi Biscuits
Today I'm sharing whole wheat Karachi Biscuits. These are very popular in Hyderabad bakeries. Karachi Biscuits are buttery, crunchy, melt in the mouth.
Ingredients:
Whole wheat flour - 3/4 cup 
Unsalted butter - 1/2 cup
Powdered sugar - 1/2 cup
Milk powder - 2 tablespoons
Custard powder - 2 tablespoons
Tutti-Frutti - 2 tablespoons
Baking powder - 1 tsp
Salt - 1/4 tsp
Pineapple essence - 1 tsp
Method:
# Sieve whole wheat flour, custard powder, baking powder and salt. (dry ingredients)
# Mix milk powder to dry ingredients.
# Cream butter and powdered sugar.
# Add pineapple essence and tutti- frutti to butter sugar mixture.
# Mix dry ingredients and butter mixture.
# Give a log shape, cling wrap and refrigerate for 30 minutes.
# Preheat oven / microwave convection mode @170'c.
# Cut the biscuits with 1/4 inch.
# Grease baking tin with oil/ butter.
# Arrange the biscuits in baking tin and bake @ 170'c for 12-15 minutes.
# Once baked allow it to cool on wire rack.
Store the biscuits in an airtight container.

Tutti Frutti Cake

Tutti Frutti Cake
Tutti Frutti Cake is a simple, easy, super soft, moist cake perfect for tea-time. This is an eggless tea-time cake with whole wheat flour. You can add raisins, berries, nuts if you don't have tutti frutti.
Notes:
* Sieve dry ingredients for 7-8 times. Which is a very important step for eggless whole wheat flour cakes.
* Do not over mix the batter.
* Dust some flour with tutti frutti so that it doesn't sink to the cake batter.
* Do not bake cake at high temperature.

Ingredients:
Whole wheat flour - 1.5 cups + 2 tablespoons (dust the greased baking tin & mix with tutti frutti)
Powdered sugar - 3/4 cup
Baking powder - 1 tsp
Salt - 1/4 tsp
Butter - 1/2 cup 
Curd - 1/4 cup
Milk - 1/2 cup 
Tutti Frutti - 3 tablespoons
Vannila essence - few drops
Method:
# Grease baking tin with oil / butter and dust some whole wheat flour. 
# Mix 1 tablespoon of whole wheat flour with tutti frutti.
# Sieve whole wheat flour, baking powder and salt for 7-8 times. (dry ingredients)
# Melt butter, add powdered sugar mix well.
# Add curd, milk, vannila essence to butter sugar mixture. (wet ingredients)
# Mix dry ingredients and wet ingredients in small batches. (cut and fold method)
# Add tutti frutti to the cake batter. Mix well.
# Pour the cake batter in baking tin.
# Preheat oven/ microwave convection mode @ 170'c.
# Bake at same temperature for 35-40 minutes.
# Once baked check by inserting a knife. If it comes out clean means it's baked well.
# After 5 minutes unmold the cake.
# Allow it to cool on wire rack.
# Slice your cake once it cools down completely.

Chai Masala Cookies

Chai Masala Cookies:
Chai Masala Cookies are perfect for tea-time. These are super delicious, crispy, Indian flavoured, tasty cookies. I used whole wheat flour and fresh cream (malai), chai masala powder and jaggery.

Ingredients:
Whole wheat flour - 1 cup / 120 gms
Jaggery powder - 1/2 cup
Fresh cream (malai) - 1/2 cup / 120 ml
Chai Masala powder - 1.5 tablespoons
Baking powder - 3/4 tsp
Salt - 1/4 tsp
Method:
# Sieve whole wheat flour, baking powder, baking soda for 4-5 times. (Dry ingredients)
# Mix fresh cream and jaggery powder.
# Add chai masala powder and mix well.
# Add dry ingredients with the above mixture.
# Make a dough. Do not over knead.
# Refrigerate the dough for 1/2 hr.
# Roll the dough, use cookie cutter and shape them.
# Preheat oven/ microwave convection mode @ 170'.
# Grease your baking tin with oil.
# Place the cookies in baking tin and bake @ same temperature for 12-15 minutes.
# Once baked cool on wire rack.
# Store them in an airtight container.
Notes:
* I've used homemade malai/ fesh cream. You can  use Amul / any store bought fresh cream.
* Sieve dry ingredients well.
* While baking second batch of cookies, reduce the time. As it bakes faster.
