Suji Rusk

Suji Rusk
 Rusk is a best snacks served for a evening tea-time. It is a twice baked suji/ sooji cake. I'm sharing a healthy version of suji Rusk with jaggery powder.
 
Ingredients:
Sooji / Semolina - 1 cup / 170 hms
Jaggery powder - 1/2 cup / 90 gms
Buttermilk - 1 cup / 250 ml
Oil - 1/4 cup / 60 ml
Baking powder - 1 tsp
Baking soda - 1/4 tsp
Cardamom essence - 1/2 tsp
Method:
# Mix semolina, jaggery powder, buttermilk, oil, cardamom essence.
# Leave the above mixture for 30 minutes.
# Preheat microwave convection oven @ 170'c.
# Grease baking tin with oil.
# Add baking powder and baking soda to the cake mixture. (Mix well)
# Pour the batter into greased tin and bake @ 170'c for 30 minutes.
# Check by inserting a knife. Once the cake is baked well allow it to cool.
# Demold the cake after 10 minutes.
# Allow it cool completely. You can refrigerate for 1 hr before you slice your cake.
Notes:
* No need to preheat while baking the Rusk / placing the cake slices while baking.
# Place the cake slices in a greased baking tin and bake @150'c for 10 minutes. Or until it changes its colour to light brown.
# Flip the Rusk so that the other side gets baked well @ same temperature for 10 minutes.
# Allow it to cool completely on wire rack.
Serve with tea/ coffee.

Savoury Biscuits

Savoury biscuits
Happy to share my 200th recipe in my blog.
Healthy, simple, crispy baked whole wheat savoury biscuits are perfect for tea-time. I'm going to add these biscuits in mixture which is a savoury snack... we South India's prepare for Diwali.
Ingredients:
Whole wheat flour - 1 cup
Unsalted butter - 60 gms
Salt - 1 tsp
Water - 1/4 cup
Method:
# Mix whole wheat flour, salt & 40 gms of butter, mix until you get bread crumbs consistency.
# Sprinkle water and knead a stiff dough and refrigerate for 30 minutes.
# Roll the dough apply 1 tsp of butter and dust 1 tsp of wheat flour and fold to a book shape as shown in the picture.
# Cling wrap and refrigerate for 4 hrs.
# Repeat this process for 5 times.
# After 5 times roll again and cut in desired shape.
# Preheat microwave convection mode @180'c.
# Grease the baking tin and place these biscuits and bake for 13-15 minutes at same temperature.
# Once done allow it to cool on wire rack.
Store in an airtight container and enjoy for tea-time.

Cheese Crackers

Cheese Crackers
Cheese Crackers are perfect tea-time companion. These are prepared with whole wheat, cheese and crushed pepper. No baking powder and baking soda required. 
Ingredients:
Whole Wheat flour - 1 cup / 130 gms
Cheese - 50 gms ( grated)
Unsalted butter - 2 tablespoons
Crushed pepper - 1 tsp
Mixed herbs - 1tsp
Salt - to taste
Chilled water - 1/4 cup / as required
Method:
# Mix whole wheat flour, grated cheese, butter, crushed pepper, mixed herbs.
# Mix well until you get bread crumbs consistency.
# Sprinkle chilled water and knead the dough. 
# Refrigerate the dough for 20 minutes.
# Dust some wheat flour and roll to a chapati / flat bread. It should be thin. Use a cookie cutter to shape crackers.

# Preheat oven/ microwave convection mode @ 170'c.
# Grease your baking tin with oil/ butter. Arrange the crackers and bake @ same temperature for 10 minutes.
Allow it to cool completely, store in an airtight container.
