Kodumillet Muskmelon Smoothie

Kodumillet Muskmelon Smoothie 
Good morning 
Muskmelon Kodumillet Smoothie is a delicious, thick, creamy millet recipe which can be had as breakfast.
Ingredients:
Muskmelon- 500 gms
Kodumillet/ Varagu- 100 gms
Milk - 1 cup
Sugar - 2 tablespoons 
Nuts for garnish 
Method:
# Wash and soak Varagu/ Kodumillet for 3-4 hrs.
# Cook the millet well. Let it cool down completely.
# In a mixer jar add cooked millet, sugar, chopped Muskmelon and blend to a smooth mixture.
# You can chill and Serve with nuts topped.

Homemade Chocos

Homemade Chocos 
Good Morning!
Homemade Chocos which are healthy and tasty, perfect to be served as a cereals for breakfast with warm milk. These are made with fiber rich, sweetened with Jaggery powder. 
Ingredients:
Oats - 1 cup
Whole Wheat flour- 1/4th cup
Jaggery - 3 tablespoons 
Cashews- 7-8 nos
Almonds- 7-8 nos
Peanut butter- 2 tablespoons 
Cocoa powder- 1 tablespoon 
Water just to make a soft dough 
Method:
# Dry roast, Oats, cashews and almonds separately.
# Make a fine powder of Cashews and almonds. 
# Make Oats powder as well.
# Mix Oats powder, cashew powder, almond powder, jaggery powder, Peanut butter, cocoa, wheat flour. Sprinkle little water and Make a tight dough. Rest the dough for 10 minutes.
# Preheat oven at 160'c. Grease a baking tin.
# Shape the dough in small chocos by pressing with thumb finger and index finger. 
# Bake at 160'c for 13-15 minutes.
Once it becomes crispy allow it to cool down completely. Store at an airtight container.

Rava idli Upma

Sprouted Rava Idli Upma (Leftover recipe)
Sprouted Rava idli Upma is a healthy, delicious and easy to make for breakfast or for a tiffin time. I had 5-6 leftover rava idlis and some Sprouted green moong.
Ingredients:
Sprouted green moong - 1/ cup
Rava idli - 5-6
Oil - 2 tablespoons 
Mustard seeds- 1 tsp
Urud dal - 1/2 tsp
Turmeric powder- 1 pinch
Peanuts - 2 tablespoons 
Onion - 1 medium size 
Tomato- 1 medium size 
Green chilli- finely chopped 1 tsp
Ginger - finely chopped 1 tsp
Coriander leaves for garnish 
Method:
# Heat a pan, add oil....add mustard seeds, once it splutter well add urud dall and peanuts. Let it slightly change colour.
# Add ginger, green chilli's and saute well...add finely chopped onions, little salt and saute well. 
# Add Tomatoes, Sprouted moong, turmeric powder sprinkle water and cook on a medium flame for 3 minutes.
# Crumble the leftover idlis and add to the Tomato Sprouted masala. 
# Mix everything well and close the lid for 2 minutes.
# Once done add chopped coriander leaves and serve.

Strawberry Smoothie

Strawberry Smoothie
Good Morning!
A simple, easy, healthy, fuss-free Smoothie recipe with fresh strawberries and banana's.
Ingredients:
Fresh strawberries - 1 cup
Banana's - 3-4 nos (medium size)
Oats - 2 tablespoons
Milk - 1/2 cup (125 ml)
Sugar - 1 tablespoon
Method:
# In a blender add chopped bananas, chopped strawberries, oats, sugar, milk and blend well... until every thing is smooth.
# Transfer to the serving glasses, garnish with strawberries and enjoy.

Semolina Bread(Tricolour Bread)

Semolina Bread Tricolor Bread

Tricolor Semolina Bread are easy and simple to bake with zero sugar and artificial colours. If you wish can add colours but I always prefer healthy cooking and baking.
Ingredients:
Semolina - 500 gms / 1/2 kg
Instant active dry yeast - 1 tsp
Jaggery powder - 2 tablespoons
Oil - 4 tablespoons
Mint leaves - 1/2 bunch
Tomatoes - 2 medium size
Salt - 1.5 TSP
Milk+ water - 1.5 cups 
Butter - to brush
Milk - 1 tsp ( to brush)

Method:
# Today I'm using normal semolina...so I used mixer jar to pulse it / make a fine semolina.
# Divide the rava in three portions.
# Grind tomatoes to a paste.
# Wash and grind mint leaves to fine paste.
# Mix yeast, salt, jaggery powder equally.
# First take the white portion...add water + milk 1/2 cup and mix well.
# Apply some oil and cling wrap and allow it to proof.
# Take the second portion add tomato paste, water + milk and mix well.

# Apply oil and cling wrap allow it to proof.
# Take the third portion add mint paste, water + milk and mix well.
# Apply oil cling wrap and allow it to proof.
# For first proofing it took 1 hr 30 minutes.
After First proofing:
# Take the white portion... Grease your working surface with little oil and start kneading the dough. Sprinkle 1/4 tsp of oil... grease your palm with oil and start kneading. Initially it will be difficult, sticky.... add 1/4 tsp of oil and knead...it will take 15- 20 minutes for each dough to knead. After 20 minutes the dough will be smooth and elastic.
# Grease your surface with oil... shape your dough to rectangular shape.(white dough)
# Place the orange rectangular dough above the white dough and press gently. Place the green rectangular dough above the orange. Press gently.
# Give a log shape. Seal and pinch the ends.
# Grease baking tin with oil. Place the log in baking tin.
Baking tin size 7×3.
# Allow it to proof for 20-25 minutes or until it reaches the trim of the pan.
After Second proofing:
# Preheat oven / microwave convection mode @ 190'c. 
# Brush milk and bake at 190'c for 30-35 minutes.
# Once baked... apply butter. 
# In 5 minutes loosen the baking tin and demould the bread.
# Let it cool on wire rack for 2-3 hrs.
#  Let it cool down completely... slice your bread with cerrated knife.

Bread Upma

Bread Upma
Bread Upma is a simple, quick, easy colourful breakfast recipe which takes just 5-7 minutes.

Today I'm using homemade semolina bread.
Homemade Semolina Bread. Below link is from my own blog:

Ingredients:
Bread slices - 7-8 nos
Grated carrots - 2 tablespoons
Chopped onion - 1 medium size
Peanuts - 2 tsp
Chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Mustard / Rai - 1 tsp
Salt - 1/2 tsp
Refined oil - 1 tablespoon
Chopped coriander for garnish

Method:
# Cut bread slices in squares.

# Heat a pan add oil, peanuts slightly fry them add mustard let it crackle well, put chopped onion fry until it becomes transparent add grated carrots, salt, turmeric, chilli powder sprinkle water mix well and close the pan for 2 minutes.

# Mix well add bread pieces and stir well. On low flame let it be for 2 minutes. Add chopped coriander leaves mix well and serve.

Homemade Granola

Homemade Granola

Simple and easy way to prepare Homemade Granola. We can use coconut oil but as this is a lockdown period so I switched to refined oil.

Ingredients:
Oats - 200 gms
Honey - 2 tablespoons
Refined oil - 2 tablespoons
Chopped Almonds - 15 nos
Melon seeds - 1 tablespoon
Black raisins - 1 tablespoon
Blue berries & cranberries - 1 tablespoon
Vanilla essence - few drops

Method:
# Dry roast oats. ( without changing colour)

# Mix honey, oil & vanilla essence together.

# Make sure honey & oil is mixed well...add roasted oats, berries, raisins, melon seeds & almonds.

# Preheat microwave convention oven @ 160'c.
# Grease baking tin with oil and pour the mixture.

# Bake @ 160'c for 20-25 minutes.

# Stir in every 5 minutes.




* In every 5 minutes you can see the change in the colour of granola.
Homemade Granola is ready. Allow it to cool, store in an airtight container.
