Kasuri Methi / Dried Fenugreek Leaves

Kasuri Methi / Dried Fenugreek Leaves in microwave!
It is very easy to dry herbs or leaves on microwave without changing its colour.
We can also Sun dry leaves, but it takes some time or days...but this is the easiest way to dry Kasuri Methi.

Method:
# Wash methi leaves / fenugreek leaves, and spread on a kitchen towel for about an hour, as it will absorb all the water.

# Take 2 tissue paper, place one above the other.

# Spread the methi leaves / fenugreek leaves on one half of the tissue paper.
Cover it with other half.

# Microwave for 2 min. In every 30 sec you need to check.

# Within 2 min, Kasuri Methi will be dried without losing its natural colour.


# You can store in an airtight container, and use when ever you want.
In the similar way you can dry mint leaves, corriander / cilantro, curry leaves etc.

Strawberry Jam

Strawberry Jam

Ingredients:

Fresh strawberries - 1 cup chopped
Sugar - 3/4 cup
Cornflour - 1 tsp
Method:


# Use microwave safe bowl, add chopped strawberryies, sugar, keep it in microwave high-power for 5 min(Always stir in every 40-50 sec).

# Mix 1 tsp of water with cornflour.
# After 3 min take the jam out, add cornflour mixture and mix well.

# Microwave it for  2 more minutes... take the jam out allow it to cool. It will be thick once it comes to room temperature.


This is ready to serve but I want a smooth texture, so I used mixer jar to blend the jam.
 If you wish you can add lemon juice, while jam comes together.
Store in an airtight container and refrigerate.

Eggless Christmas Cake ( Whole Wheat Flour)
Today I'm sharing a simple Eggless Christmas Cake prepared using whole wheat flour, jaggery and brown sugar, without alcohol or rum.


I'M using fresh orange juice to soak my fruits and nuts. As I've already soaked my fruits and nuts in orange juice for 3-4 days which is stored in refrigerator.

Ingredients:

Whole Wheat Flour - 125 grms
Butter (unsalted) - 60- 70 grms
Baking powder - 1 tsp
Cinnamon powder - 1/2 tsp
Nutmeg powder - 1/2 tsp
Milk - 1 cup
Fresh Orange juice - 1 cup
Jaggery - 1/2 cup
Brown Sugar - 1/2 cup
Strawberry jam - 1 tablespoon
Fruits and nuts:
Black Raisins, Apricot, Cranberries, Normal Raises, Cherries, almonds and Cashews. All together 1 cup.
Method:

# Soak fruits and nuts in orange juice for 2-3 days or atleast mix well.

# Just melt butter, add brown sugar and jaggery syrup,  jam and mix well. 

# Add soaked fruits with melted butter, jam and jaggery syrup together.

# Mix, whole wheat flour, baking powder, nutmeg powder, cinnamon powder together.

# Mix dry ingredients and wet ingredients together.
# Add warm milk to the mixture.

# Grease cake tin with butter, dust some flour.
Tin size 6×3.

# Pour the cake mixture in greased baking tin.
At the top add some more cranberries and chopped cashews.
# Preheat Microwave @ 150-160'c.
# Bake @ 150-160'c for 40-45 min.
I have used convection mode.
Check your cake, using a knife in the middle of the cake, If it comes clear your cake is done.
Allow it to cool and serve.

Ghee in Microwave

How to prepare Ghee in Microwave

Ghee is nothing but clarified butter. When milk solids and water are separated from butterfat...we get ghee / clarified butter. Ghee can be easily prepared in microwave in just few minutes.

Method:
# I have taken 100-150 grms of unsaturated butter.
# Butter should be in room temperature.
# Always use a microwave safe bowl...while preparing any recipe in microwave.
# Put the butter in microwave safe bowl.
# At high power, in microwave for 3 minutes.
# Keep it for another 2 minutes.
You can get a wonderful ghee in just few minutes.
