Eggless Savoury Muffins - Airfryer Recipe!!

Eggless Savoury Muffins - Airfrier Recipe!!
We gendrally love to eat Muffins, but I tried this Savoury Muffins, stuffed with Cottage Cheese and Spinach.... Which came out really well. I would love to share this recipe, as you can serve this as a party special!!!




Ingredients:
All purpose flour - 1 cup
Baking soda - 1/ tsp
Baking powder - 1/2 tsp
Butter - 50 grms
Condensed milk - 2 tablespoon
For filling:
Spinach - 1/2 cup
Cottage cheese - 1/2 cup
Cumin seeds powder - 1/2 tsp
Pepper powder - 1/2 tsp
Kasuri methi /
Mixed herbs -  1/2 tsp
Salt to taste
Method:
# Seive the flour, add baking soda, baking powder.
# Mix Condensed milk and butter well.
# Add wet ingredients with dry ingredients, add little salt and pepper powder.
# For filling heat pan add oil add spinach, salt, Cumin powder, pepper powder and mix, then add kasuri methi.
# Preheat the Airfrier @ 180'c for 5 min.
# Pour the mixture in mould 1/2 and then fill the filling, then again pour the mixture and bake it at 180'c for 15-20 min.

Cauliflower Casserole - Christmas Special Recipe! ( Airfryer Recipe )

Cauliflower Casserole - Christmas Special Recipe!!!
A delicious cheesy baked dish. Today I'm sharing an Airfried version of Cauliflower Casserole.



Ingredients:
Cauliflower - few florets
Onion - 1 small
White sauce - 1 cup
Cheese - 2 sheets / 1/2 cup grated
Butter - 1 tablespoon
Pepper powder - 1/2 tsp
Kasuri methi / Mixed Herbs - 1/2 tsp
Powder biscuits / bread crumbs - 1 cup
Method:
# Grease the baking tin.
# Add chopped onions, add cauliflower florets, white sauce, butter.

# Sprinkle pepper powder, kasuri methi, cheese sheets, and at last bread crumbs or powdered biscuits.
#Preheat Airfrier @ 200'c for 5 min.
# Bake @ 200'c for 15 - 20 min or till nice crust at the top comes.

Eggless Orange Chocolate Cake - Christmas Special ( Airfryer Recipe)

Eggless Orange Chocolate Cake - A Christmas Special Cake  with a simple chocolate ganache.




Ingredients:
All purpose flour - 100 grms
Butter - 50 grms
Condensed milk - 1/2 cup
Orange juice - 1 cup
Orange zest - 1tsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Cocoa powder - 1 tablespoon

Ingredients for Chocolate ganache:
Butter - 25 grms
Powdered sugar - 2 tablespoons
Milk powder - 2 tablespoons
Cocoa powder - 2 tablespoons
Milk - 2-3 tsp.


Method :
# Sieve all dry ingredients, all purpose flour, baking powder, baking soda, cocoa powder.(dry ingredients)
# Melt butter, add condensed milk and mix well.
# Add orange zest and orange juice to condensed milk and butter mixture. (wet ingredients)
# Now add dry ingredients with wet ingredients.... gently fold your cake batter.
# Preheat Airfrier @ 180'c for 5 min.
# Grease cake tin with butter and sprinkle some all purpose flour.
# Bake @ 180'c for 20 - 25 min.
# Let the cake rest for 1 hr.
# Cut the cake in two halves. Cut the top portion of the cake to level it.
# For ganache, melt butter add powdered sugar, milk powder, cocoa powder and mix well. If needed add some more milk.
You can prepare this cake in microwave convection mode:
Preheat @ 160'c. Bake @ 160'c for 35-40 min. 
If you are baking in pressure cooker:
Add salt and spread it well... preheat your cooker for 15 min on medium flame.
Bake you cake on medium flame for 40-45 min. Without gasket, without whistle.

Spread the chocolate ganache in the cake,  keep the bottom layer at the top and spread ganache. Sprinkle some cherries and serve.

Pop Rice Sweet Balls - Aval Pori and Nel Pori Urundai

 Karthigai Deepam Special - Aval Pori and Nel Pori Urundai.
Pori Urundai is a traditional recipe made for Karthikai Deepam. These are healthy to consume during tea time. While preparing Pori Urundai, strain your jaggery syrup, which is very important. For crispyness of Urundai you should open the Pori from the pack just before you add to the jaggery syrup.


Ingredients:
Popped Beaten rice flakes /
Popped Paddy flakes             - 4 cups
Jaggery                                     - 1 1/2 cups
Coconut cut into  bits              -  1/4 cup
Dry Ginger powder                    - 1/2 tsp
Cardoman powder                    - 1/2 tsp
Method:
# Heat a pan add jaggery syrup and let it boil well. To check consistency of the jaggery syrup, pour the syrup in water and roll it with your fingers, it should turn into ball shape.
# Add cardoman powder, dry ginger powder, bits of coconut pieces, and mix well.
# In a tray clean the popped Beaten Rice flakes, & winnow the husk.
# Add fried Chana and pour the Jaggery syrup and mix well.
# Apply rice flour in your palms before preparing the Sweet balls.
# When you roll the ball for the first time, don't worry about the shape ... roll it for the second time & the sweet ball will get the round shape and also it will firmly hold together.
Store these Pori Urundais in air tight container to maintain the crispness.

Methi Paratha - Winter Special Recipe


Ingredients:
Methi / Fenugreek leaves - 1 cup
Whole wheat flour - 150 grms
Jeera / Cumin seeds powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Oil to prepare Paratha
Salt to taste
Method:
# Wash fenugreek / methi leaves and roughly chop.
# Mix whole wheat flour, fenugreek leaves, cumin powder, salt, red chilli powder. Sprinkle water little by little and knead the dough. Add few drops of oil and knead the dough.
# Heat the pan or tawa and roll the parathas.
# Cook well and serve with raita or sabji.

Carrot Halwa - Winter Special

Carrot Halwa - Winter Special Recipe
Carrot Halwa is a dessert recipe, which is very popular during winter season.....specially in North India.
It is prepared with red carrots, milk, sugar and fried nuts. This recipe is little time taking as we need to cook grated carrots in milk and wait till the milk gets reduced, then add sugar and again it takes some time to get halwa consistency. Today, I am sharing a simple and quick recipe with milk powder which takes 10-15 minutes to prepare carrot halwa.


Ingredients:
Grated carrots - 150 grms
Sugar - 75 - 100 grms
Milk powder - 100 grms / 1 cup
Milk - 2 tablespoons
Cardoman powder - 1 teaspoon
Ghee - 2 tablespoons
Cashew and Raisins few
Method:
# Heat kadai add 1 tsp of ghee and fry milk powder and switch off the stove. ( it should not change colour)
# In another pan add 1 tablespoon of ghee and add grated carrots, close the pan for 2-3 min.
# Once carrots are cooked add sugar and mix well.
# It will become slightly watery but when we add milk powder the consistency will be perfect.
# Add milk powder fried in ghee and mix well.
# After mixing milk powder it will take hardly 2-3 min. In few seconds halwa will leave the sides of the pan, switch off the stove.
# Add ghee in a pan fry cashews and raisins pour it in halwa and add cardoman powde, mix well. It will take hardly 10 - 15 min to prepare carrot halwa.

White / Bechamel Sauce

White / Bechamel Sauce is very easy to prepare. We can even store this sauce for 1 week to 10 days in refrigerator.


Ingredients:
All purpose flour - 50grms
Butter - 50grms
Milk - 100 ml
Pepper powder - 1/2 tsp
Salt to taste
Onion in which 6-7 cloves inserted
Method:
# Heat the pan, add butter, just it should Melt add all purpose flour and fry. It should not change the colour.
# Milk should be warm.
# After frying all purpose flour in butter switch off the stove. Wait till it becomes warm.
# Add milk to the fried mixture.
# Mix well with out lumps, then switch on the stove. Flame should be in medium.
# Add the onion which is inserted with cloves, let it boil for 5 min.
# Add salt and pepper to the Sauce, mix well. Remove the Onion from the Sauce.
This sauce is mainly used in Italian recipes. Even we can use this sauce in our Indian cuisine ( such as vegetable kurma, dal makhani, gravy used for koftas).

Eggless Orange Muffins - (An Airfryer Recipe )

Eggless Orange Muffins -  a Christmas special Recipe. I baked my Orange Muffins in Airfrier, which came out really well.

Ingredients:
All purpose flour - 100 grms
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Fresh orange juice - 1 cup
Unsalted butter - 50 grms
Condensed milk - 3 tablespoons
Choco chips for garnish.
Method:
# Seive all-purpose flour, baking powder, baking soda together.
# Melt butter, mix condensed milk till it becomes a smooth mixture. ( hardly 5 min it will take).
# Add Orange juice to melted butter and condensed milk, mix well.
# Add wet ingredients with dry ingredients and just mix well.
# If required add little warm water to make smooth batter.
# Preheat Airfrier @ 170'c for 5 min.
# Pour the batter in silicon mould and bake @170'c for 10- 15 min.
( You can take any mould to bake your Muffins)
# Garnish with choco chips.

Eggless Banana Bread - ( An Airfryer Recipe )

Eggless Banana Bread is an easy and a wonderful recipe for breakfast.
Ingredients:
All purpose flour - 100 grms
Melted butter - 70 grms
Ripe banana - 1 big nos
Condensed milk - 3 tablespoons
Baking powder - 1 teaspoon
Baking soda - 2 pinch
Peanut Butter - 1 tablespoon
Choco chips to garnish ( Bake proof)

Method:
# Seive all-purpose flour, baking soda, baking powder.
# Cut and mash banana, just before you mix all wet ingredients other wise banana will change its colour.
# Add 2 tablespoons of warm water with peanut Butter and mix well. Make sure you add just warm water other wise the peanut butter will curdle.
# Mix wet ingredients condensed milk, melted butter and mashed banana in a bowl.
# Now include wet ingredients with dry ingredients and just mix.
# If the bread batter is very thick then add some warm water and mix well.
# Take a baking tin, Grease with butter sprinkle all purpose flour and keep it ready.
# Preheat Airfrier at 180'c for 5 min.
# Take Greased tin add bread batter,  just 1/4 of the baking tin, now put peanut butter and choco chips and pour remaining bread batter and sprinkle some choco chips at the top and bake it in Airfrier for 180'c for 10 - 15 min.
# once bread is baked well, allow it to cool for atleast 1/2 hr and then serve.

Seven Cups Burfi


Seven cups burfi




Ingredients:
Besan/Gram Flour - 1 cup
Ghee - 1 cup
Milk - 1 cup
Grated coconut - 1 cup
Sugar - 3 cups
Method:

# Take all ingredients and put them in a kadai and mix well without lumps.


# Switch on the stove, flame should be in medium stir continuously.


# It takes 12-15 minutes to become thick and froth appears on sides of pan.
# Grease the plate with ghee, and when the mixture becomes thick, with full froth switch off the stove.

# Pour it in greased plate.
After 2 min you will be able to cut pieces.
This Burfi will take hardly 10-15 min.

Sev / Omapodi - Diwali Snack Recipe

Sev / Omapodi is a wonderful Snack Recipe for Diwali.

Ingredients:
Gram Flour / Besan - 200 grms
Rice flour - 2 tablespoons
Ajwain water - 1 cup
Red chill powder - 1 tsp
Butter - 1 tablespoon
Oil for frying
Salt to taste


Method:
# Soak ajwain in warm water for 2 hs and filter it.
# Mix Gram Flour, rice flour, red chilli powder, salt and mix well.
# Add Butter and mix till it comes to bread crumbs consistency, then add ajwain water and knead the dough.
# you can add little water to make dough.
# Heat oil, take the dough, put it in the sev dics and press in oil directly.
# Oil should be hot.
# Turn after 1/2 min.
# It will take 1 or 1 1/2 min to cook the sev. Remove from kadai and serve.

Mixture - Diwali Special

Mixture is an easy Snack, just need to mix all ingredients. But most of us think we need to prepare lot of ingredients for that!
Which is true. But if you prepare the ingredients (a day before or when you have time), it becomes easy to prepare mixture.
   For me Diwali is incomplete without Special Mixture. I always prefer to include the Snacks which I like the most or the ingredients which is available in my kitchen.

Ingredients:
Maida Chips - 1 cup
Thenzgual - 1 cup
Sev/Ompoodi - 2 cups
Kara Boondi - 1 cup
Fried Cornflake - 1 cup
Fried Beaten Rice Flakes - 1 cup
Fried or Roasted Peanuts - 1/2 cup
Fried Curry leaves - 1/2 cup
Other ingredients like Ribbon pakodas, Potato Chips can be included according to your wish.

Peanut Burfi - Diwali Special Sweet

Peanut Burfi - Diwali Sweet Recipe, with minimum ingredients it takes just 5 - 10 min to prepare.

Ingredients:
Peanuts - 1 cup
Sugar - 3/4 cup
Ghee - 2 tablespoon
Pista Chopped - 1 tsp
Method:
# Dry roast peanuts and remove skin.
# Coarse powder the peanuts.
# Heat pan add sugar and little water, make 2 string consistency.
# Add coarse powdered peanuts, mix well.
# Add ghee, mix well. It will take hardly 5 min to thicken.
# Grease plate with ghee. Pour the mix and sprinkle Chopped pista.
# Cut into pieces and serve.
Pista is optional, it is just to garnish.

Maida chips - Airfryer Recipe!

Maida chips

Maida chips is an excellent snack recipe for tea-time. I tried this recipe in Airfrier, which came out really well.

Ingredients:
All purpose flour - 100 grms
Ajwain - 1/2 teaspoon
Red chill powder - 1/2 teaspoon
Oil - 6 tablespoons
Salt to taste

Method:
# Mix maida/ all purpose flour, red chilli powder, ajwain and salt. Heat 3 tablespoons of oil, pour in the mixture and knead the dough. The dough should be stiff.( as we do for poori)
# Preheat the Airfrier 180'c for 5 minutes 
# Roll the dough like chappathi and cut into square or diamond shape.
# Put the pieces in Airfrier and brush oil, fry it @ 180'c for 5 min.
# In between you can brush some more oil.
Once fried, allow it to cool.....can store them in an airtight container.

Vijayadasami Special (Paal Payasam)

Special Payasam for Vijayadasami

 This is one of my favourite Payasam or dessert recipe. One of the popular desserts of south India. Only three ingredients required to prepare this recipe.

Ingredients:

Milk - 1/2 litres
Rice - 1 tbs
Sugar -100 grms

Method:
# Wash rice and add with milk.
# When it starts boiling, simmer the stove.
# It will take time to reduce, after 1/2 hr the milk will become thick and rice will be cooked well.
# With the help of spatula mash the rice well.
# Add sugar and let it boil for another 10 min.
# Switch off the stove, once the Payasam becomes thick and creamy. Serve.

Navaratri Day - 8 ( Carrot Payasam and Karamani / kidney beans Sundal

Carrot Payasam

Another healthy dessert, in which we use a vegetable to prepare this dessert. This is so healthy and can be served hot or chill. In Summer you can keep it in refrigerator and serve or in winters we generally serve hot. 

Ingredients:
Carrot - 2 nos
Milk - 2 cups
Sugar - 3/4 cup
Cardoman powder - 1 tsp
Cashew, raisins, Sara parupu few
Ghee - 1 tsp

Method:
# Cook carrots, make puree.
# Heat pan add carrot puree and milk boil well.
# Add sugar, simmer the stove for few min, add cardoman powder and switch off the stove.
# Fry cashew and raisins, add to carrot Payasam. Serve

Karamani / Kidney beans Sundal
Ingredients:
Karamani / Kidney beans - 100 grms
Grated coconut - 1/2 cup
Mustard - 1 tsp
Urud dal - 1/2 tsp
Curry powder - 1 tablespoon
Curry leaves - few
Asafoetida - 1 tsp
Green chillis - 2 nos
Salt to taste
Oil for seasoning

Method:
# Soak karamani for 3 hrs.
# cook soft, add oil to pan, put mustard when it crackle add urud dal , karamani, grated coconut , curry powder , salt, asafoetida, green chillis, curry leaves and mix well. Serve.

Navaratri Day -9 (Sakkarai Pongal(sweet pongal) and Konda kadalai / Chick Peas Sundal

Sakkarai Pongal/Sweet Pongal

Sakkarai Pongal is prepared on nineth day of Navaratri, as we also call it Saraswati puja. 

Ingredients:
Rice - 1 cup
Moong dal - 1/2 cup
Jaggery - 1 1/2 cups
Ghee - 3 tablespoons
Cashew, Raisins few
Cardoman powder - 1 tsp

Method :
# Dry roast moong dal until the raw smell goes.
# Take moong dal and rice together and Pressure cook for 3-4 whistles.
# Dissolve jaggery in water and filter the syrup.
# Add jaggery syrup to the cooked rice and dal.
# Heat the pan add cooked Pongal and jaggery syrup and mix well in a low flame .
# Heat kadai add ghee, fry cashew, raisins    and pour it in sakkarai Pongal.
# Add cardoman powder to the Pongal.
Serve.

Konda kadalai / Chick Peas Sundal

Ingredients:
Konda kadalai - 100 grms
Grated coconut - 1/2 cup
Mustard - 1 tsp
Asafoetida - 1/2 tsp
Green chillis - 2 nos
Curry powder - 1 tablespoon
Curry leaves few
Oil for seasoning
Salt to taste

Method:
# Soak Chick Peas overnight.
# Cook Chick Peas, heat kadai add oil, when heated add mustard when it crackle, curry leaves, chick peas, salt, green chillis, asafoetida, curry powder, grated coconut and mix well.
Serve.

Sago Fruit Custard

Sago fruit custard is a Thailand dessert, which is prepared with coconut milk. But I used normal milk to prepare this fancy dessert for my family.


Ingredients:
Sago - 2 tablespoons
Milk - 1 cup
Rock Sugar candy - 3/4 cup
(Powdered)
Vanilla essence - 1/2 teaspoon
Fruits like banana   - 2 nos
Apple, Pomegranate - 2 each
Method:
# Soak sago for 3-4 hrs.
# Heat a pan add 1/2 cup of water and 1/2 cup of milk, add sago and cook it till sago becomes transparent.
# when sago is cooked add powdered rock sugar candy mix well.
# Add vanilla essence and switch off the stove.
# Once it is cool, serve with fruits.

Navaratri Day - 6 ( Sago Fruit Custard/Javvarisi pazham Payasam and Kollu/Horse Gram Sundal )

Sago Fruit Custard is a Thailand dessert, with minimum ingredients.

Ingredients:
Sago - 2 tablespoons
Milk - 1 cup
Rock Sugar Candy - 3/4 cup
Vanilla essence - 1/2 teaspoon
Fruits banana - 2 nos
Apple, Pomegranate - 1 no each

Method:
# Soak sago for 3-4 hrs.
# Heat a pan pour 1/2 cup of water and 1/2cup of milk, add soaked sago mix well.
# When sago is cooked ( it becomes transparent) add rock sugar candy, boil well.
# Add vanilla essence and switch off the stove.
Serve custard with fruits.

Kollu / Horse Gram Sundal

Ingredients:

Kollu/Horse Gram - 100 grms

Grated coconut

Mustard - 1 teaspoon

Urud dal - 1 teaspoon

Turmeric powder - 1/2 teaspoon

Curry powder - 1 tablespoon

Asafoetida - 1/2 teaspoon

Curry leaves few

Oil for seasoning

Salt to taste 

Method:

# Soak kollu/ Horse Gram overnight.

# Pressure cook the kollu / Horse Gram for 3 whistle.

# Heat kadai, pour oil when heated add mustard, when it crackle add urud dal, cooked kollu, turmeric powder, salt, hing, grated coconut, and curry powder. Mix well and serve.

Navaratri Day - 3 ( Rava payasam / Semolina Payasam and Green peas / Pachai Patani Sundal)

Rava / Semolina Payasam

Rava/ Semolina Payasam or Kheer, is a delicious recipe which can be served any time.

Ingredients:
Rava/Semolina - 2 tablespoon
Milk - 250 litres
Sugar - 1 1/2 cups
Ghee - 2 tablespoon
Cardoman powder 1 tsp
Sara parupu
Yellow food colour if you prefer
Cashew few
Raisins few

Method:
# Heat a pan add 1 tsp of ghee, add rava and fry to pinkish colour.
# In another pan boil milk well, add roasted rava let it boil well.
# Once the rava cooks add sugar and mix well. (It will be thick in consistency) 

# once it comes to payasam consistency switch off the stove.
# Add fried cashew, raisins, Sara parupu and cardoman powder and a pinch of food colour if you prefer.

Green Peas Sundal

Ingredients:
Green Peas - 200 grms
Mustard - 2 teaspoon
Urud dal - 1 teaspoon
Hing - 1 teaspoon
Grated coconut - 1/2 cup
Curry powder - 2 teaspoon
Salt to taste
Curry leaves few
Oil for seasoning

Method:
# Soak green Peas , boil well.
# Heat a kadai add oil,  mustard when crackles add urud dal, curry leaves, boiled green Peas mix well.
# Add salt, hing, curry powder, grated coconut and mix well. Ready to serve.

Vermicelli Payasam

Vermicelli Payasam is an easy dessert, which takes hardly 5-10 min to prepare, as if we are using roasted vermicelli. This recipe is specialy liked by kids. 

Navaratri Day - 2 

Vermicelli Payasam

Ingredients:
Vermicelli - 50 grms
Milk - 2 cups
Sugar - 1 cup
Cardoman powder - 1 teaspoon
Ghee - 1 teaspoon
Cashew few
Raisins few

Method:

# Heat a pan boil milk add roasted vermicell, when vermicell is cooked add sugar.

# Let the sugar dissolve with milk.

# Fry cashew and Raisins in ghee.

# Add cashew and raisins to the Payasam.

# Sprinkler cardoman powder to the payasam.


Green Gram Dal Sundal

Ingredients:

Green Gram Dal - 100 grms

Grated coconut - 1/2 cup

Turmeric powder 1/2 teaspoon

Asafoetida 1/2 teaspoon

Green chillis - 2 nos

Mustard - 1 teaspoon

Urud dal 1 teaspoon

Curry  powder - 1 teaspoon

Curry leaves few

Oil for seasoning

Salt to taste.

Method:

# Soak green Gram Dal for 3 hrs.cook soft strain excess water.

# Heat kadai add oil, add mustard let it crackle, then add urud dal, curry leaves, cooked green Gram Dal , mix well.

# Add grated coconut , salt , green chill, asafoetida, salt to taste. Mix well with curry  powder. Serve

Navaratri Day - 1 - Rice Coconut payasum and Chana Dal Sundal

Rice Coconut Payasam

This Payasam is a traditional dessert prepared with rice, coconut and jaggery....but  today I am, using rock sugar candy, which is healthier and can be used instead of sugar or jaggery.

Ingredients:
Raw rice - 1 tablespoon
Coconut grated - 1/2 cup
Rock sugar candy - 1 cup
Cardoman powder - 1/2 teaspoon
Cashew few
Ghee to fry cashew

Method:
# Soak rice for 1/2 hr,  then grind rice and Coconut to fine paste.
# Take a heavy bottom pan add the grinded paste and 2 cups of water, mix well and let it boil.
# You can add water according to the thickness. Mix continuous so that to avoid lumps.
#Once the mixture is cooked add kulkundu / rock sugar candy and let it boil on slow flame. (need to stir continuously) it will take 5- 10 minutes to cook.
# Fry cashew and add to Payasam.
# Sprinkler cardoman powder .

Kadala parupu/Chana dal Sundal

Ingredients:
Channa dal- 100 grms
Grated coconut - 1/2 cup
Mustard - 1 teaspoon
Urud dal - 1/2 teaspoon
Red chilli - 3-4 nos
Asafoetida - 1/2 teaspoon
Curry leaves - few
Curry powder 1 teaspoon
Oil for seasoning
Salt to taste

Method :

For curry powder - dry roast ( chana dal 1 tablespoon, coriander seeds - 2 teaspoon, jeera - 1/2 teaspoon, pepper- 1/2 teaspoon, red chili- 2, curry leaves few. Dry roast the above ingredients and once it is cool put it in the Mixie grind a coarse powder.

Soak chana dal for 1 hr , cook & strain  excess water.

Heat oil in a pan add mustard when it crackles add urud dal, red chilli, cooked chana dal, asafoetida, salt, mix well add curry powder, curry leaves, grated coconut, mix well. Serve.

Masala Peanuts / Groundnuts - Airfryer Recipe

Masala Peanuts / Groundnuts is one of the most delicious Indian snack which every one loves. I have tried this recipe in Airfrier which came out really well.

Ingredients:
Groundnuts - 100 grms
Gram flour/ besan - 2 tablespoons
Red chilli powder - 1 teaspoon
Asafoetida - 1 teaspoon
Oil - 1 teaspoon
Salt to taste
Method:
1. Wash groundnuts in water and strain it. 
2. Add besan, red chilli powder, asafoetida, salt and mix well.
3. If needed just sprinkler little water.
4. Preheat Airfrier @ 180' c for 3 min.
5. Put the masala groundnuts in the Airfrier compartment and fry at 180' c for 8- 10 min. In between brush oil.
   This is an excellent healthy snack recipe, which every one loves.

Oats Chikki / Granola Bar

Oats Chikki / Granola bars are healthy sweet items, which is a wonderful substitute for chocolates.

Ingredients:
Roasted Oats - 100 grms
Jaggery - 100 grms
Roasted peanuts - 50 grms
Walnuts - 25 grms
Cashew, Badam, Raisins - 25 grms
Butter - 2 tablespoon
Honey - 2 tablespoon
Fried cornflake - 50 grms
Method :
# Heat pan add jaggery syrup, boil the syrup to ball consistency as shown in my earlier video.
# Add  Butter mix well, simmer the stove add honey, roasted oats, peanuts, walnuts, badam, cashew, Raisins and cornflake to the jaggery syrup mix well.
# Grease the plate with Butter or oil, pour the mixture. Spread with spatula.
# Let the mixture cool for 5 to 7 min.
# Cut it in shape you like.

Lemon Poha

Lemon Poha is a very tasty and easy breakfast special recipe.

Ingredients:
Beaten rice flakes - 150 grms
Asafoetida - 1/2 tsp
Turmeric powder - 1 tsp
Peanuts - 2 tablespoon
Oil - 2 or 3 tablespoon
Mustard seed - 1 tsp
Chana dal - 1 tsp
Urud dal - 1 tsp
Curry and coriander leaves - few
Lemon - 1 nos
Green chili - 2 nos
Salt to taste
Method:
# wash beaten rice flakes, squiz water add turmeric powder and salt mix well.
# Let it soak for 1/2 hr to 1 hr.
# Heat kadai add oil , when oil is heated, add mustard seed, crackle well, add chana dal, urud dal then add peanuts roast well.
# Add green chillis, asafoetida, curry and coriander leaves then add soaked beaten rice flakes.
# Mix well close the kadai and simmer the stove for 5 to 7 min.
# Open the kadai Poha will be cooked add lemon juice and turn off the stove.
Serve with any chutney or curd. A fantastic breakfast special recipe.

Tomato Paratha

Tomato Paratha is one of my favorite break fast special recipe.

Ingredients:
Tomato - 3 nos
Whole wheat flour - 2 cups
Turmeric powder - 1/2 teaspoon
Kasori methi - 1/2 teaspoon
Red chili powder - 1/2 teaspoon
Ajwain - 1/2 teaspoon
Oil as required
Salt to taste
Method:
# Grind Tomatos with red chili powder, make puree.
# Mix whole wheat flour, turmeric powder, kasori methi, ajwain and salt. Then add tomato puree to dry ingredients. Knead dough.
# Dough should be stiff like chappath or paratha dough.
# Heat tava, roll your tomato paratha, and cook both sides with oil.

Nendhram Pazham payasam/ Pradhaman

Nendhra Pazham payasam / Pradhaman is a traditional payasam of Kerala which is prepared during Onam festival.

Ingredients :
Nendhra Pazham - 2 medium size
Coconut peices - 2 tablespoons
Dry ginger powder - 1 teaspoon
Jaggery - 1 cup
Coconut milk - 1 cup
Ghee - 2 tablespoons
Method :
# Cut nendram pazham in pieces.
# Heat a pan add ghee fry coconut peices to light brown, remove coconut peices then add nendhra Pazham peices and fry well.
# Close the lid of the pan cook for 5 min, stir well.
# once nendhra pazham is mashed well add jaggery syrup, mix well let it boil for few minutes.
# Add dry ginger powder, fried coconut peices, mix well switch of the stove.
# Add coconut milk and serve.
Make sure you add the coconut milk after you switch of the stove other wise there are chances of milk to get curdled.

Thenkuzhal ( An Airfryer recipe )

Thenkuzhal is a perfect Teatime Snack, even it is a snack item prepared during festivals. You can even deep fry thenkuzhal, but I have used my Airfryer.

Ingredients :
Rice flour - 4 cups
Roasted urud dhal powder - 1 cup
Jeera - 1 teaspoon
Oil - 6 tablespoons
Hing - 1 teaspoon
Salt to taste
Method :
1. Heat pan and pour 3 tablespoons of oil.
2. Mix all dry ingredients well.
3. Pour the heated oil into the mixture, leave for few minutes, as it will be very hot.
4. Mix well, consistency should be of a bread crumbs, then add water little by little.
5. The dough should be stiff, as we make for poori dough.
6. Preheat the Airfryer at 180'c for 3 min.
7. Take thenkuzhal mould put the dough and fry it in Airfryer at 180'c for 7 min.
8. After 3 min brush oil to the thenkuzhal.
Serve thenkuzhal during tea time.

Methi Pulav

Methi is rich in iron and minerals, but because of its slight bitterness many of us don't prefer much, specially kids.
     This recipe is an excellent lunch box special and I hope everyone would love it.

Ingredients :
Methi / Ventheyakeerai - 1 bunch
Rice - 1 1/2 cups
Onion chopped - 1 big
Peanuts - 1/2 cup
Ghee - 1 teaspoon
Oil - 2 or 3 teaspoons
Cardamon - 2 nos
Clove - 2 nos
Cinnamon - 1 stick
Sauf - 1 teaspoon
Red chili powder - 1 teaspoon
Turmeric powder - 1 teaspoon
Salt to taste
Water as required
Method :
* Heat pressure pan, add oil and ghee.
* Add sauf, cinnamon, clove, cardamon, peanuts then add chopped onions, saute well, add methi leaves, chilli powder, turmeric powder, salt mix well.
*  Add rice and water, stir well... pressure cook for 2 or 3 whistles.
*  Once pressure settles down... open and mix well.
Serve with curd or any raita of your choice.

Chola poori

Chola poori is one of my favorite dish. Chola can be had like a chat or for batura, poori or even with plain rice or jeera rice. Let's see the ingredients.

Ingredients:

Chick peas  - 1 cup
( White)
Onion chopped - 1 big
Tomato - 2 nos
Ginger  - 1 bit
Garlic - 2 or 3
Jeera - 1 teaspoon
Oil - 2 or 3 tablespoons
Red chili powder - 1 /2 teaspoon
Turmeric powder - 1/2 teaspoon
Chola masala - 1 tablespoon
Bay leaf - 1 or 2
Tea bag - 1
Salt to taste

Ingredients for chola masala powder:

Clove - 2, cinnamon - 1small stick, cardamon - 2, coriander seeds- 1 teaspoon, cumin seeds - 1/2 teaspoon, sauf - 1 teaspoon, poppy seeds -1/2 teaspoon, pepper - 1/2 teaspoon, star anise - 1 or 2
Dry roast all above given ingredients and make a powder. You can store in an airtight container.

Method:
# soak Chick peas for 7or 8 hours.

# pressure cook chick peas for 6 or 7 whistles with tea bag or take a small muslin cloth put 1 teaspoon of tea powder and tie with a thread and put in the cooker with Chick peas.

# make tomato paste.

# heat a heavy bottom pan, pour 2 tablespoons of oil, once heated put bay leaf, jeera, chopped garlic ginger saute well, add onions fry well till the raw smell goes, add tomato paste, turmeric powder, chill powder, salt mix well and wait till the oil comes out.

# remove tea bag from pressure cooker, add boiled Chick peas to the gravy.

# once boiled well add chola masala which you have prepared. Let it boil for 3 min well if required add water according to the consistency you want.

# chop coriander leaves and garnish.

Ingredients to make poori:

Whole wheat flour - 1 cup

Oil required for frying

Salt to taste

Take whole wheat flour add salt, oil 2 teaspoon, sprinkle water and knead a stiff dough. Heat oil in a kadai, roll poori and fry in oil. Make sure you knead the dough just before frying so that it will not soak much oil and puff up well.

Nei Appam for Krishna Janmashtami / Krishna Jayanthi

Nei Appam is a sweet recipe which is prepared during Krishna Janmashtami / Krishna Jayanthi.


Ingredients :
Rice flour - 2 cups
Whole wheat flour - 1/2 cup
Jaggery - 1 cup
Cardamon powder - 1 teaspoon
Ghee - 2 tablespoons
Oil as required
Method :
1. Dissolve jaggery in water...and filter the
     syrup.
2.  Mix rice flour, whole wheat flour,
      cardamon, in jaggery syrup.
3.   Consistency should be like Idly batter.
4.   Pour ghee to the Batter, and mix well.
5.   Heat Kuzhi Panniaram pan, pour oil, when it  is heated start preparing panniarams.

Salt Cheedai's for Krishna Janmashtami

This salt cheedai is one of my favorite recipe, which is also an important savouries made for janmashtami. I tried this recipe in Airfryer, which came out extremely well. These cheedai's can also be deep fried.





Ingredients :
Rice flour   - 4 cups
Roasted urud dhal powder - 1/2 cup
Unsalted butter - 75 to 100 grams
Asafetida - 1 1/2 teaspoons
Roasted jeera powder - 1 teaspoon
Roasted pepper powder - 1 teaspoons
Grated coconut - 1/2 cup
Oil - 2 teaspoons
Salt to taste and water to knead the dough.
Method :
#  Mix all dry ingredients with butter.
#  Consistency should be of a bread crumbs.
# Sprinkle water and knead the dough.
#   Make small balls out of the dough.
#    Preheat Airfryer at 180'c for 4 min.
#   place aluminum foil in the Airfryer and put the prepared ball.
# Airfry for 180'c for 7 min.
#  After 3 min, open the Airfryer brush oil and fry cheedai's for 3 more minutes.

Munthiri or Cashew Pakoda

Munthiri or Cashew Pakoda is  a perfect snack served for tea-time. An Airfried Pakoda made with gluten free.



Ingredients:
Munthiri/Cashew - 1/2 cup
Besan/gram flour - 1 1/2 cups
Rice flour                - 1 tablespoons
Finely chopped       - 3-4 nos
green chillies
Ginger                       - 1 tablespoon
Mint and coriander - Handful
leaves
Asafetida/hing        - 1 teaspoon
Oil                              - 2 tablespoons
Salt                             - to taste
Water as required
Method:
1. Preheat the Airfryer at 180 'c for 4 min.
2. Mix all dry ingredients together.
3. Heat 1.5 tablespoons of oil, pour it with the mixed ingredients.
4. Sprinkle water to make a rough dough. Do not knead.
5. Give a shape of pakoda's and put it in Airfryer. (180 'c for 7 min)
6. Inbetween check and brush some oil. 
Serve Munthiri / Cashew Pakoda's with green chutney or tomato sauce.

Puran Poli

Poli is an important dish which is made for festivals.


Ingredients :
For filling:
Grated coconut - 1cup
Jaggery               - 3/4 cup
Cardamon           - 1/4 teaspoons
Poli:
Whole wheat flour - 1 cup
Rava              - 1/4 cup
Turmeric powder - 1/4 teaspoons
Salt a pinch
Oil as required.
Method :
# clean the jaggery and make thick syrup,
    and let it boil well...add grated coconut
     and mix well on low heat. When it
     comes to ball consistency add
     cardamon powder and turn off heat.

#  To make dough take whole wheat flour, rava, turmeric powder, pinch of salt mix well... sprinkle water and knead a soft dough. Add little oil and make a soft dough. ( rest the dough for 20 minutes)

#   In a banana leaf spread oil generously
       take a lemon size dough and apply
      oil on your fingers and start to spread
       small chappathi...then keep the filling
       cover the filling well...again dip your fingers in oil 
       and prepare a small chapati size poli.
       
#      Heat a tava and sprinkle oil...
         put the Poli on the tava, cook both
         sides and serve.
#       ( when you knead the dough it has
          to rest for at least 15 to 20 min.
           And apply oil to the dough well.)
     
      Serve these poli's with ghee. Do try and provide your comments.

Chikki made of oats

This power pack chikki is a wonderful bar candy which kids love, instead of giving kids chocolate, you can try this candy.
   I am sure kids love it

Ingredients:
Oats           - 1 cup
Cornflakes- 1 cup
Raisins       - 1 tablespoons
Peanuts      - 1 tablespoons
Walnut         - 1 tablespoons
Badam         -  1 tablespoons
Sugar            -  1/2 cup
Honey           -  2 tablespoons
Butter            -  1 tablespoons
Method :

* Dry roast oats, badam, walnuts, peanuts
    separately.
*  Heat a pan pour sugar and stir slowly
    till it caramelized, add butter and honey.
     Stir well and turn off the stove.
*   Add roasted ingredients, cornflakes,
      Raisins and mix well.
*    Grease a plate or tray with oil or ghee
       And pour the mixture and level it.
*    With a knife make marks of square or
      Diamond shape, after 5 min  you can
       cut into pieces.
 
     This is a wonderful candy given to children when they ask u for sweets or chocolate.

Tomato pulav

Tomato Pulav
 Simple and easy pulav recipe with tomatoes. Perfect lunch box special!


Ingredients :

Raw Rice - 1 cup
Onion - 1 big
Tomatoes - 3- nos
Bay leaf - 1 no
Clove - 1 or 2 nos
Cinnamon - 1/2 inch
Ginger - small bit
Jeera / Cumin seeds - 1/2 tsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Oil - 2 tablespoons
Salt to taste
Method :

# Heat a pressure cooker, add ghee / oil... Once oil is heated add bay leaves, cumin, clove, cinnamon,  onions....fry until onion changes to pinkish in colour.

# Make a puree with tomatoes and ginger. 


# Add tomato puree, chilli powder, turmeric powder, salt. 
# Saute well.


# Add rice, with 2 cups of water. ( ratio 1:2)


# After 2 whistles switch of the stove.
Finally garnish with chopped coriander leaves.
